It first went viral a few years ago, but in my kitchen, it’s still a total superstar. And the best part? It’s made all in one pan! That means less mess and more flavor. If you love chickpeas, melted feta, and roasted veggies, you’re going to love this.

Method
Preheat the Oven
First things first preheat your oven to 200°C (or about 400°F). This gives the oven time to heat up while you prepare everything else. A hot oven helps the tomatoes burst and the feta melt just right.
Chop the Veggies
While the oven is heating, wash and chop your vegetables. Slice the red bell pepper into thin strips and cut the yellow onion into thin slices. You want everything to be a similar size so it cooks evenly. No need to cut the cherry tomatoes they’ll burst open naturally while baking and release all their sweet, juicy flavor.
Layer in the Baking Dish
Now grab your medium-sized baking dish. Place the cherry tomatoes, red pepper slices, and onion into the dish. Then, add the block of feta cheese right in the center. This helps the flavors come together as the feta melts into everything. Drizzle olive oil over the top, making sure the veggies and feta get a nice coating. Finally, sprinkle a little salt just a pinch, since feta is already salty.
Bake Until Golden and Bubbling
Place the dish in the oven and bake it for about 35 minutes. During this time, the cherry tomatoes will soften and burst, the peppers and onions will roast beautifully, and the feta will turn creamy with a golden top. Your kitchen is going to smell amazing!
Add Chickpeas and Spinach
Once everything is baked and bubbling, carefully remove the dish from the oven. Now it’s time to stir in the drained and rinsed chickpeas along with two generous handfuls of fresh spinach. The heat from the dish will wilt the spinach perfectly without overcooking it.
Gently Mix Everything Together
Using a spoon, gently stir the chickpeas and spinach into the roasted veggies and melted feta. Mix just enough to combine everything, but try not to mash the feta completely. It’s nice to leave some creamy chunks for extra texture and flavor.
Top with Fresh Basil
Lastly, tear a few fresh basil leaves and sprinkle them on top. This adds a burst of freshness and a little extra color that really makes the dish pop.

Directions

- In your baking dish, add cherry tomatoes, chopped red pepper, sliced onion, and the block of feta cheese right in the middle.
- Drizzle with olive oil and sprinkle with a little salt.
- Bake for 35 minutes. The tomatoes will burst, and the feta will get soft and golden. Yum!
- Carefully take the dish out of the oven. Add your chickpeas and spinach right into the hot dish.
- Mix everything gently. The spinach will wilt, and everything will come together like magic.
- Top with fresh basil leaves, and that’s it!
Notes
- Don’t add the chickpeas and spinach too early. If you bake them with everything else, the chickpeas can dry out and the spinach might burn.
- Use a deep enough baking dish so the juices from the tomatoes don’t overflow.
- Mix gently after baking so you don’t mash the feta too much you still want some creamy chunks!

- Toast up some bread and scoop the chickpeas on top it’s my favorite way to eat it!
- Serve over cooked rice or quinoa for a heartier meal.
- Add a soft-boiled egg on top for extra protein.
- Enjoy it cold the next day as a salad it’s still delicious!

Did you know feta cheese comes from Greece and is made from sheep’s milk or a mix of sheep and goat’s milk? It has a crumbly texture and salty flavor, and it melts perfectly when baked just like in this recipe!
