Chop the Veggies

If you don’t like it too hot, remove the seeds. Peel the garlic cloves and slice them up. Finally, chop the parsley, including some of the soft stems because they have good flavor too.
Blend It Up
Now it’s time to make the sauce base. Put the chopped tomatoes, chillies, garlic, and parsley into your blender or food processor. Add the sweet red pepper paste, tomato purée, and pomegranate molasses. Blend everything until the mixture looks smooth and colorful. It should be thick, but not chunky.
Cook the Sauce
Pour the blended mixture into a saucepan. Add the olive oil and place the pan over low heat. Let the sauce simmer gently for about 10 minutes. Stir it once in a while so it doesn’t stick to the bottom. The smell will be amazing! You’ll see the sauce begin to thicken a little as it cooks.

Notes
- If your red pepper paste or tomato purée is already salty, add less salt at the end.
- Taste the sauce before adding sugar some tomatoes are already sweet enough.
- Don’t cook on high heat or the sauce might burn or taste bitter. Low and slow is best!
