It’s smooth, zesty, and just the right mix of sweet and salty. Plus, it’s so simple to make. You just shake it up in a jar! I like making a big batch and keeping it in the fridge all week.
Method
Prepare Your Jar
Start by grabbing a clean jam jar or any container with a tight-fitting lid. This will be your mixing tool, so make sure it’s dry and ready to go. You don’t need a fancy blender or whisk just a good jar with a lid!
Add the Ingredients
Next, measure out all your ingredients: extra virgin olive oil, tahini, fresh lemon juice, white wine vinegar, Dijon mustard, runny honey (or agave syrup), freshly grated garlic, sea salt flakes, and dried mint. Carefully spoon or pour each one into the jar. You can grate your garlic directly into the jar to save a dish!
Time to Shake
Once everything is inside, seal the jar tightly with the lid. Now give it a good shake like you’re mixing a magic potion! Shake it for about 30 seconds until the dressing looks creamy and smooth. The oil and tahini will come together, and all the flavors will blend beautifully.
Check the Consistency
Open the jar and take a quick look. If it seems too thick, that’s okay! Just add 1 or 2 teaspoons of ice-cold water and give it another quick shake. This will thin out the dressing just enough without watering it down too much.

Directions
- Grab your jar and open the lid.
- Add all the ingredients into the jar.
- Put the lid on tightly.
- Shake it up like you’re mixing a magic potion!
- Done! Pop it in the fridge and shake again before using.
Notes
- Don’t skip the shaking! If you don’t mix it well, the oil and tahini won’t blend smoothly.
- Use cold water at the end only if the dressing is too thick start with just a tiny bit.
- If your tahini has separated in the jar, stir it before using so your dressing doesn’t turn out lumpy.
