Start by placing 120g of pitted dates and 120g of roasted, unsalted cashews into a food processor or a strong blender. These are the only two ingredients you need, and they work together perfectly the dates add natural sweetness and stickiness, while the cashews give the fudge its creamy texture. Blend the ingredients together until the mixture turns smooth and thick. This may take a minute or two, depending on your blender’s strength. You might need to stop once or twice to scrape down the sides and make sure everything is blending evenly. Once it forms a soft dough-like texture, you’re ready for the next step.
Adding a Flavor Boost
At this point, if you’d like to boost the flavor, sprinkle in a tiny pinch of salt. It might seem like a small thing, but trust me it really brings out the sweetness of the dates and the richness of the cashews. Blend again just for a few seconds to mix in the salt evenly.
Chilling the Mixture
Now, take the smooth mixture and scoop it into a small container or tub. Spread it evenly with a spoon or spatula. Then, place the container into the freezer for 10–15 minutes. This step isn’t absolutely necessary, but it makes a big difference. Chilling the mixture helps it firm up, which makes shaping the fudge much easier later on.
Shaping the Fudge
Once chilled, remove the container from the freezer. Take the fudge out and place it on a clean surface or cutting board. Use a knife to divide the mix into 8 equal parts. You can now shape each piece however you like! I usually go with small cube shapes to make them look like classic fudge squares, but you can also roll them into balls if you’re in a hurry. Both shapes taste amazing!
Storing the Fudge
Finally, place your finished fudge pieces into an airtight container and keep them in the fridge. This helps them stay fresh and keeps the texture just right. They’ll last for 3 to 4 days, but they’re so tasty they probably won’t stick around that long!
