Hey friends! Welcome back to my kitchen or should I say my meyhane! Today, we’re making Tavuk Kanat, which means Chicken Wings in Turkish. This recipe is super simple, but it’s all about giving a little extra love and attention to each step. Trust me, it’s totally worth it. We’re talking about juicy, flavorful wings that are perfect for any barbecue, family dinner, or even just a chill night at home.
Method
Get those wings ready!
First things first, it’s time to prep our chicken wings. Take each wing and cut off the very tip you don’t need for this recipe, but don’t throw them away! You can freeze the tips to use later for making homemade chicken stock. After removing the tips, find the natural joint between the drumette and the flat (the two main parts of the wing). Using a sharp knife, carefully cut through the joint to separate them. Don’t force it; if you find the right spot, the knife should glide through easily. Once all your wings are separated and trimmed, set them aside while you get the marinade ready.
Make the magic marinade.
In a big mixing bowl, combine the natural yogurt, tatlı biber salçası (sweet pepper paste), finely grated garlic, pul biber (chili flakes), sweet paprika, dried oregano, coarse black pepper, olive oil, and just 1 teaspoon of the sea salt (save the rest for later!). Stir everything together until it forms a rich, creamy marinade that smells absolutely amazing. Make sure all the spices are evenly mixed so every bite of chicken gets the perfect flavor.
Time for a cozy bath.
Now, it’s time to treat those wings to a spa day! Place all the drumettes and flats into the bowl of marinade. Using your hands or a big spoon, toss the wings really well, making sure every piece is fully coated. You want the marinade to be clinging to every surface, soaking into the meat. Once they’re all covered, stretch some clingfilm over the bowl and pop it into the refrigerator. Let the wings marinate for at least 12 hours but if you can leave them for 24 hours, that’s even better. The extra time allows the flavors to really sink into the chicken, making the wings super juicy and packed with flavor.
Skewer them up!
When you’re ready to cook, remove the wings from the fridge and start threading them onto your skewers. If you have flat skewers, even better, they help keep the wings steady and prevent them from spinning around. Thread a few wings on each skewer, but don’t pack them too tightly. Giving them a little breathing room helps them cook more evenly and lets the smoky heat do its magic.
Fire it up!
If you’re grilling on a mangal (charcoal grill), it’s time to light your coals. Be generous, you want a lot of coals, not just a small pile. Let the coals burn until they are covered in a white ash. This means they are hot enough and will provide an even, steady heat without sudden flare-ups that can burn the chicken. Once the grill is ready, lay your skewered wings over the coals. Cook them slowly, turning them every few minutes so they brown and cook evenly on all sides. You want them to take about 20 to 25 minutes to cook low and slow is the secret to juicy wings! About 5 minutes before they’re done, use a sharp knife to make a few little slits across the skin of each wing. This helps any remaining marinade flavors seep deeper into the meat. At this stage, sprinkle over the reserved ½ teaspoon of sea salt to wake up all those spices and create an even more mouthwatering finish.
Air Fryer Option:
If you’re using an air fryer instead, preheat it to 190°C. Arrange the wings in the basket in a single layer. Don’t overcrowd them. Cook for 20 to 25 minutes, flipping them a couple of times during cooking to ensure they get crispy and golden on all sides. The air fryer will give you a slightly different texture, but they’ll still be delicious!
Oven Option:
For the oven method, preheat your oven to 190°C fan (or 210°C if not using fan). Line a baking tray with parchment paper or foil for easy cleanup. Lay the wings out in a single layer with a bit of space between each one. Bake them in the middle of the oven for 30 to 35 minutes, flipping halfway through to get a nice even color and crispy skin. The oven method is super easy and still delivers that juicy, flavorful result!

minutesIngredients
1kg chicken wings
3 tbsp natural yogurt
1 tbsp tatlı biber salçası (sweet pepper paste)
1 tbsp fresh garlic, finely grated
2 tsp pul biber (chili flakes)
2 tsp sweet paprika (kırmızı toz biber)
2 tsp dried oregano
1 ½ tsp sea salt
¾ tsp coarse black pepper
1 tbsp olive oil
Directions
- Get those wings ready!
First, cut the tips off your chicken wings (save them for homemade chicken stock later!). Then, separate the drums and flats by slicing through the natural joint. Easy peasy! - Make the magic marinade.
In a big bowl, mix yogurt, pepper paste, garlic, pul biber, paprika, oregano, black pepper, olive oil, and just 1 teaspoon of the sea salt. Stir it up until it’s nice and creamy. - Time for a cozy bath.
Toss all your wings into the marinade. Make sure every single piece gets coated like it’s getting a little spa treatment! Cover the bowl with clingfilm and pop it in the fridge for at least 12 hours 24 hours if you have the patience (it’s sooo worth it). - Skewer them up!
Thread the marinated wings onto flat skewers. This makes it way easier to turn them evenly while cooking. - Fire it up!
If you’re using a grill (Mangal), light a big pile of charcoal and let it burn until it turns white-hot. This means steady, even heat without sudden burning.
Place the skewers over the coals and cook for about 20–25 minutes, turning often so the wings get golden and juicy. Around the last 5 minutes, make a couple of tiny slits in the skin and sprinkle the rest of the sea salt over them. Flavor explosion coming your way! - Air Fryer Option:
Preheat your air fryer to 190°C and cook the wings for 20–25 minutes, flipping them once or twice. - Oven Option:
Preheat your oven to 190°C fan (or 210°C regular). Place the wings on a lined baking tray, pop it in the middle rack, and bake for 30–35 minutes, flipping halfway through.
Notes
- Don’t rush the marinade time. The longer the wings sit in it, the juicier and more flavorful they get!
- Watch your coals! If they’re too hot (flaming), you’ll burn the outside and undercook the inside. Wait for that perfect white ash stage.
- Flip often. Keep the wings moving so they cook evenly and stay juicy.
- Don’t skip the extra salt sprinkle at the end! It wakes up all the flavors beautifully.

Serving Suggestions
- Serve hot with a sprinkle of fresh lemon juice.
- Add some thick yogurt on the side for dipping.
- Pair them with a crunchy salad or grilled veggies.
- Wrap them in pita bread with a little onion salad for a quick meal!
