Hi friends! If you’re not sure what to make for dinner tonight, I’ve got a tasty and super quick idea Sticky Seeded Pomegranate & Honey Salmon. This recipe is packed with flavor, takes just a few minutes to prep, and only 5 minutes to cook! The salmon comes out hot, crispy, and sticky with a sweet and tangy glaze. It’s so good, we always end up licking our fingers. It’s perfect for busy nights and fancy enough for a weekend treat.

Method

Preheat the Oven

First, set your oven to 230°C fan or 250°C regular heat. This high temperature is important it helps the salmon caramelize quickly, making the outside crispy and sticky while keeping the inside tender and juicy. Always preheat your oven fully before cooking so the salmon hits that high heat right away.

Dry the Salmon

Next, pat the salmon chunks completely dry using kitchen paper. This step might seem small, but it’s key. If the salmon is wet, it will steam in the oven instead of crisping up. Dry salmon also holds the glaze better, which means more flavor in every bite.

Mix the Glaze

In a medium mixing bowl, combine 2 tablespoons of pomegranate molasses, 1 teaspoon of runny honey, and 1/4 teaspoon of pul biber (or red pepper flakes if that’s what you have). Stir them well to make a smooth, sticky glaze. The molasses brings a deep, tangy flavor, the honey adds sweetness, and the pul biber gives just a little warm heat.

Coat the Salmon

Add the dried salmon chunks into the bowl with the glaze. Gently toss them until each piece is fully coated with the sticky sauce. Take your time here you want every side of each salmon cube to soak up that sweet and spicy flavor.

Add the Seeds

Now sprinkle in the 2 teaspoons of sesame seeds and 1 teaspoon of nigella seeds. These tiny seeds don’t just add flavor they give the salmon a little crunch and make it look beautiful. Make sure the seeds are sticking to the glaze and covering the fish evenly.

Arrange on Tray

Line a baking tray with parchment paper to keep the salmon from sticking. Then, place the salmon chunks on the tray with space between each piece. Don’t crowd them! This space allows hot air to circulate, so each piece crisps up and doesn’t steam.

Bake the Salmon

Place the tray on the top shelf of your oven and let it cook for just 5 minutes. That’s all it takes! You’ll see the glaze bubble, the edges turn golden, and the seeds toast just a bit. The result is sticky, crispy, and completely delicious. Be careful not to overcook salmon dries out fast at high heat.

Ingredients

  • 500g skinless salmon fillets, cut into 3cm chunks

  • 2 tablespoons pomegranate molasses

  • 1 teaspoon runny honey

  • 1/4 teaspoon pul biber (or red pepper flakes)

  • 2 teaspoons sesame seeds

  • 1 teaspoon nigella seeds

Directions

  • Preheat your oven to 230°C fan (that’s 250°C regular oven).
  • Dry the salmon. Use kitchen paper to pat the salmon pieces completely dry. This helps them get crispy in the oven.
  • Mix the glaze. In a bowl, stir together the pomegranate molasses, honey, and pul biber.
  • Coat the salmon. Add the salmon chunks into the bowl and mix them until they’re fully covered in the sticky glaze.
  • Add the seeds. Sprinkle sesame and nigella seeds over the salmon. Make sure each piece gets some seeds!
  • Bake. Place the salmon on a tray lined with parchment paper. Leave space between the pieces. This makes sure they crisp up nicely.
  • Cook for 5 minutes on the top shelf of the oven. That’s it! They’ll be golden, sticky, and full of flavor.

Notes

  • Dry the salmon well. If it’s too wet, it won’t get crispy.
  • Space the pieces apart. If they’re too close, they’ll steam instead of roast.
  • Watch the time! Only cook for 5 minutes. Too long, and the salmon will dry out.
  • Use high heat. That’s the secret to the caramelized glaze and crispy edges.

Serving Suggestions

  • Serve with warm brown rice or bulgur wheat.
  • Add a fresh salad or steamed veggies on the side.
  • These also taste great with flatbread or inside a wrap!
  • Next week, I’ll share my herby green lentil & brown rice “mücendra” and sweet cabbage side that go perfectly with this dish.

Fun Fact

Did you know pomegranate molasses is made by boiling down pomegranate juice until it becomes thick and tangy? It’s a popular ingredient in Middle Eastern cooking and adds a lovely sour-sweet kick to meat and veggies!

Conclusion

This sticky pomegranate honey salmon is one of my go-to recipes when I want something fast but special. It’s sweet, a little spicy, and full of flavor in every bite. It’s also fun to make and even more fun to eat. Try it tonight and let me know what you think and stay tuned for the lentil and cabbage sides I’ll be sharing next!
