They’re gluten-free and can be vegan too if you pick the right chocolate. Best part? You don’t need an oven, and they’re done in just minutes. Let’s get rolling!

Add Ingredients to the Food Processor

Start by getting your food processor ready. Into the bowl of the processor, add the almonds, soft pitted Medjool dates, chopped dark chocolate (or chocolate chips), and cacao powder. If you’d like a little extra flavor, add a pinch of salt it helps bring out the sweetness and the chocolate flavor even more. Make sure the dates are soft so they blend well. If they feel dry or hard, you can soak them in warm water for 10 minutes before using.

Blitz Until You Get Dough

Now it’s time to blend! Close the lid of your food processor and blitz everything together. Start with a few quick pulses to break the ingredients down. Then blend until the mixture turns into a soft, sticky dough. This can take about 1–2 minutes depending on your machine. Stop and scrape the sides if anything sticks. The dough should be easy to shape with your hands. If it’s too dry or crumbly, try adding one more date or just a tiny bit of water to help it come together.

Roll into Balls

Once the dough is ready, take small amounts and roll them between your hands to form little balls. I usually make mine about the size of a walnut, and I end up with around 18 balls total. You can make them smaller or bigger depending on what you like.

Optional – Roll in Cacao Powder

If you want to make your chocolate balls look a little fancy, you can roll them in extra cacao powder. Just pour a little powder into a bowl and gently roll each ball around until it’s covered. This step is optional but adds a nice touch and makes them look even more chocolatey!

Chill to Firm Up

Ingredients

  • 1 cup (200g) soft pitted Medjool dates (about 6 large ones)

  • 1/3 cup (60g) dark chocolate (chopped or chips – I used 70%)

  • 1/4 cup (25g) cacao powder

  • (Optional) A pinch of salt – I love the little pop it adds!

Directions

  • Add everything to a food processor almonds, dates, chocolate, cacao powder, and a pinch of salt if you like.
  • Blitz until it all blends into a soft dough. It should feel sticky and easy to shape.
  • Roll the dough into small balls using your hands. You can make them any size, but I usually get about 18 from this batch.
  • Optional: Roll them in extra cacao powder to make them look fancy!
  • Chill them in the fridge for a few hours to firm up. Or if you’re short on time, pop them in the freezer for 15–20 minutes.

Notes

  • Make sure your dates are soft. If they’re too dry, soak them in warm water for 10 minutes first.
  • Don’t over-blend the dough it should be soft, not oily.
  • If your dough is too dry, add another date or a tiny splash of water.
  • Be careful with your food processor. Always ask an adult to help if you’re not sure how to use it.
