Directions

  • Add the frozen raspberries, shredded coconut, and honey into a food processor.
  • Blitz until the mix is well blended and sticky.
  • Use your hands or a spoon to shape the mixture into 6 small balls.
  • Place them on a baking paper-lined plate so they don’t stick.
  • Put the plate in the freezer for 2 hours or until the balls feel solid.
  • While they’re chilling, melt the dark chocolate in the microwave. Stir every 20 seconds until smooth.
  • Take the balls out of the freezer and roll them one by one in the melted chocolate.
  • Put them back on the plate and freeze for another 10 minutes so the chocolate sets.
  • Done! Store them in the freezer, and just let one sit out for 10 minutes before eating.
