These are chewy, coconutty, chocolaty, and donât even need an oven. How awesome is that?

Toast the Coconut:
Start by pouring your shredded coconut into a dry frying pan. Turn the heat to medium and stir often with a spoon or spatula. Youâll start to see the coconut turning a light golden brown and smell its toasty aroma thatâs how you know itâs ready! Be careful not to leave the pan unattended, because coconut can burn really fast. If you want to add a little warm flavor, sprinkle in a teaspoon of cinnamon while toasting. This step brings out a rich, nutty taste that makes the cookies extra special.
Blend the Base:
Once your coconut is toasted and cooled a little, itâs time to make the cookie mixture. Add the toasted coconut to a food processor along with the pitted dates. If your dates are a little firm or dry, you can soak them in warm water for about five minutes first this makes them easier to blend. Add a pinch of salt to bring out the natural sweetness. Now blend everything until it forms a sticky, thick mixture. You donât want it to be super smooth like a paste just sticky enough that it holds together when you press it.
Shape the Cookies:
Scoop out small amounts of the date-coconut mixture using your hands or a spoon. Roll and press them gently into round cookie shapes. Then, use your finger or a small tool to press a little hole in the middle of each cookie just like the classic Samoa style! They donât need to be perfect. That little dip in the center gives them their traditional look and makes a nice spot for extra chocolate later.
Add the Chocolate:
Melt your dark chocolate (I used 80%) in the microwave or over a double boiler until smooth and glossy. Carefully dip the bottom of each cookie into the melted chocolate, then place the cookies on a tray lined with baking paper. After dipping, take a spoon and drizzle a little more melted chocolate over the tops. This adds that delicious finishing touch and makes them look extra fancy.
Chill:
Once your cookies are dipped and drizzled, slide the tray into the freezer. Let them chill for about 10 minutes, just until the chocolate hardens. This quick chill makes the cookies firm, neat, and ready to eat! After theyâre set, you can keep them in the fridge or freezer whichever you like.

Notes
- Donât walk away while toasting the coconut it can burn quickly!
- Make sure your dates are soft. If theyâre hard, soak them in warm water for 5 minutes before blending.
- Donât over-blend the coconut and dates; stop once it sticks together, not before it turns into a paste.
- Let the cookies fully set in the freezer so the chocolate doesnât smudge.
