Hi friends!
If you’re looking for a sweet and cozy breakfast that’s easy to make and totally healthy this is it! These Blueberry Lemon Baked Oats are made without any sugar or flour, but they’re still full of flavor thanks to juicy blueberries and zesty lemon. It’s one of my favorite one-dish recipes, and I make it again and again. Plus, it’s gluten-free, dairy-free, and so simple to prep!
Let’s bake something bright and delicious together!
👩🍳 Method (In Depth)
Preheat the Oven
To start, preheat your oven to 180°C (350°F). This step is important because the oats need consistent heat to bake evenly and turn golden on top. I like to do this first so the oven is nice and hot by the time the mixture is ready to go in.
Mix the Wet Ingredients
In your baking dish (I use a medium-sized one, about 8×8 inches), crack in the egg and pour in the 300ml of canned light coconut milk. Using a fork, whisk them together right in the dish until the mixture looks smooth and creamy. This saves you from dirtying another bowl yay for fewer dishes!
Add the Dry Ingredients
Next, sprinkle in your dry ingredients: 1 teaspoon of ground cinnamon, 1 teaspoon of lemon zest, 1 teaspoon of baking powder, and 60 grams of chopped almonds. Then add 150–160 grams of rolled oats, depending on how thick you want your bake. Stir everything gently with a spoon until all the ingredients are well combined.
Fold in the Blueberries
Now comes the star of the show 200 grams of fresh blueberries! Add them last and gently fold them into the mixture so they don’t burst before baking. If your berries are a bit tart, don’t worry. They’ll sweeten up beautifully in the oven.
Bake the Oats
Place the dish into the preheated oven and bake for about 35 minutes. You’ll know it’s ready when the top turns golden brown and the oats are set in the center. Try not to open the oven too much while baking so the heat stays even.
Let It Cool Before Serving
This is a key step that many people skip! Once the oats are done baking, let them cool for at least 10 minutes. This helps them firm up and makes it easier to slice or scoop. If you cut into them too early, the texture may be too soft or mushy.
Serve and Enjoy!
Now it’s time to dig in. I love topping my baked oats with a drizzle of maple syrup or a big spoon of coconut or Greek yogurt. You can also enjoy it plain if your blueberries are sweet enough on their own.

Notes
