Today I’m sharing one of my favorite go-to sandwich recipes an Air Fryer Egg Sandwich! It’s simple, tasty, and super helpful for busy days when you need a no-fuss, packed lunch. The best part? You don’t even need to boil water or stand by the stove. Your air fryer will do all the egg cooking while you mix the yummy filling. The sauce is made with yogurt, Dijon mustard, and crunchy celery so it’s creamy and healthy. I love this sandwich because it’s balanced, refreshing, and so fun to put together.

Method
Cooking the Eggs in the Air Fryer
To begin, preheat your air fryer to 120°C (248°F). Once it’s ready, gently place the eggs into the air fryer basket. There’s no need to add water just close the basket and let the eggs cook for 17 minutes. The great thing about using an air fryer is that you don’t have to watch a pot or worry about the water boiling over. The air fryer will beep when it’s done, giving you time to work on the filling.
Cooling and Peeling the Eggs
When the eggs are finished cooking, carefully remove them and immediately place them under cold running water. This step is really important it cools the eggs down quickly and helps stop the cooking process, so the yolks stay creamy and don’t get chalky. Once the eggs are cool enough to handle, gently tap them on a hard surface to crack the shell and peel them.
Preparing the Creamy Egg Sauce
While the eggs are cooling (or even while they’re still cooking), you can start preparing the sauce. In a small mixing bowl, add 80g of plain yogurt, 1 tablespoon of mayonnaise, ½ teaspoon of minced or powdered garlic, 1 tablespoon of Dijon mustard, and a pinch of salt and pepper. Then finely chop 1 stalk of celery and a few fresh chives and mix them in. Once the eggs are peeled, finely chop them and stir them into the sauce until everything is well blended and creamy. The celery adds a nice crunch while the yogurt keeps the mix light and tangy.
Assembling the Sandwich
Now it’s time to build your sandwich. Take two slices of brown bread you can use soft or toasted, depending on your preference. Lay one slice on your plate and top it with a lettuce leaf. Then, spoon your creamy egg filling generously on top of the lettuce. Place the second lettuce leaf over the egg mixture to add freshness and a bit of crunch. Finish it off with the second slice of bread. Gently press down, then slice your sandwich in half to serve.

Directions
- Preheat your air fryer to 120°C (248°F).
- Place the eggs in the air fryer basket and cook for 17 minutes at the same temperature. No need to boil water or babysit the eggs!
- While the eggs are cooking, mix the sauce ingredients in a bowl: yogurt, mayo, garlic, chives, chopped celery, Dijon mustard, salt, and pepper.
- Once the eggs are done, cool them under cold running water, then peel and finely chop them.
- Add the chopped eggs to your sauce and stir until it looks creamy and even.
- Lay one slice of bread, add a lettuce leaf, and spread the egg mixture on top. Add the second lettuce leaf and place the second slice of bread on top.
- Slice in half and enjoy your delicious sandwich!
Notes
- Don’t skip the cold water step after air frying this helps stop the cooking and makes peeling easier.
- Chop the eggs finely so the filling spreads smoothly and doesn’t fall out of the sandwich.
- Be careful not to over-mix the sauce, or it might become too runny and make the bread soggy.





Serving Suggestions
- Serve it with a side of baby carrots or apple slices for a crunchy, healthy lunch.
- Add a small bowl of soup if you want something warm with it.
- You can toast the bread for a crispier bite!
