Hi friends! Today I’m sharing one of my favorite ways to use up a full head of broccoli Pesto Broccoli Pasta! 🌱 It’s creamy, garlicky, and full of fresh green flavor. The best part? You use the whole broccoli head no waste! This dish is perfect when you want something healthy but also super comforting and filling.
This pasta is also packed with fiber and makes eating your greens way more fun. Whether you’re cooking for yourself or your family, it’s an easy meal that tastes fancy but doesn’t take much time.
Method (Detailed)
Bake the broccoli and garlic
To begin, preheat your oven to 180°C (350°F). Take your head of broccoli and chop it into small, even-sized pieces so they cook faster and more evenly. Place the broccoli pieces on a baking tray. Alongside them, add the whole bulb of garlic yes, the whole thing! There’s no need to peel it now. Pop the tray into the oven and let everything roast for 10 to 15 minutes, or until the broccoli is slightly golden and soft to the touch. The garlic will become soft and sweet inside its skin. Once done, let both the broccoli and garlic cool for a few minutes so they’re easier to handle and blend later.
Make the pesto
After your roasted veggies have cooled down, it’s time to make the pesto. Gently press or “squish” the garlic cloves out of the bulb start with three cloves, but feel free to add more if you love garlic like I do! In a food processor, combine the roasted broccoli, soft garlic, grated Parmesan cheese, toasted pine nuts, lemon zest, extra virgin olive oil, fresh basil, and a pinch of salt and pepper. Blend all the ingredients together until you get a thick, creamy green paste. You might need to stop once or twice to scrape down the sides and blend again until everything is smooth and well mixed.
Cook your pasta
While you’re blending your pesto, bring a large pot of salted water to a boil. Add in your favorite pasta spaghetti, penne, or whatever shape you like best and cook it according to the instructions on the package. Once the pasta is tender and ready, drain it, but make sure to save about a cup of the hot pasta water. This water is full of starch and will help turn your pesto into a nice creamy sauce when you mix it all together.
Mix it all together
In a large pan over low heat, add the pesto and then the cooked pasta. Slowly pour in a little bit of the reserved hot pasta water and stir gently. Keep mixing and adding small amounts of water until the sauce becomes silky and coats the pasta evenly. Don’t be surprised if you need a good amount of water the thick pesto loves to soak it up! Just go slow and stir often, and you’ll find the right texture that feels creamy without being watery.
Serve and enjoy
Now it’s time to plate your beautiful green pasta! Add a few extra toasted pine nuts on top for a yummy crunch, and decorate with a few fresh basil leaves to make it look extra nice. Finish with a drizzle of olive oil for extra flavor and shine. Then grab a fork and dig in! 😋

minutesIngredients
1 head of broccoli

1 bulb of garlic (use at least 3 cloves)
25g toasted pine nuts
1 tsp lemon zest
4 tbsp extra virgin olive oil
About 25g fresh basil
Salt and pepper to taste
Your favorite pasta (spaghetti, penne, or anything you love!)
Directions
- Bake the broccoli and garlic: Preheat your oven to 180°C (350°F). Break the broccoli into smaller pieces and place them on a tray with the whole bulb of garlic. Bake for 10–15 minutes until slightly golden and soft. Let them cool a bit.
- Make the pesto: Squeeze out 3 cloves of garlic from the roasted bulb (use more if you’re a garlic fan!). Put the broccoli, garlic, Parmesan, pine nuts, lemon zest, olive oil, fresh basil, salt, and pepper into a food processor. Blend until it becomes a smooth paste.
- Cook your pasta: Boil the pasta as the package says. When it’s ready, drain it but save some of that hot pasta water!
- Mix it all together: In a pan on low heat, add the broccoli pesto and pasta. Add some of the hot pasta water little by little while stirring to make everything creamy. You may need quite a bit don’t worry, that’s normal!
- Serve and enjoy: Top it off with more pine nuts, basil leaves, and a little drizzle of olive oil. Yum! 😋
Notes
- Don’t skip cooling the broccoli before blending hot steam can make it hard to blend and might mess with the texture.
- Start with a little pasta water and add more as needed. Too much at once can make it watery.
- Don’t use raw garlic in this recipe it won’t taste as sweet or soft as roasted garlic.

🍝 Serving Suggestions
- Add grilled chicken or tofu for extra protein.
- Sprinkle red chili flakes if you like a tiny kick.
- Try it cold the next day as a pasta salad!
💡 Fun Fact
Did you know pine nuts come from pine cones? Yep! They’re actually seeds from certain pine trees, and they’ve been used in cooking for thousands of years. Cool, right?
