Hey friends! If you’ve never roasted a whole cauliflower before, you’re in for something awesome. This recipe is one of my favorites because it’s so simple, super pretty, and totally delicious. You can enjoy it as a main dish or serve it as a side it works both ways! It’s also high in fiber and full of plants, which means it’s good for your tummy too.
My favorite part? You can eat the entire thing by yourself (I won’t tell). Just roast it, dress it up with creamy hummus and crunchy toppings, and boom you’ve got a dish that looks fancy but is easy enough for any night of the week.
Method (In Detail)
Prep the Cauliflower:
First, take a fresh head of cauliflower and remove all the leaves. Then, using a sharp knife and cutting board, carefully cut the cauliflower into small bite-sized florets. Try to make them about the same size so they cook evenly. If some pieces are too big, they might stay hard in the center while the smaller ones get too soft. Taking a minute to cut them nicely helps the whole dish turn out better.
Season It:
Now it’s time to make those florets flavorful! In a mixing bowl, add the cauliflower pieces along with 2 tablespoons of oil. Sprinkle in the garlic powder, paprika, and cumin. You can use a spoon to stir it all together, but I like to use my hands it’s messier but way more fun, and it makes sure each floret gets coated with the yummy spice mix. Make sure you take your time to mix well, so the spices really stick to the cauliflower.
Roast or Air-Fry:
You have two great cooking options: oven or air fryer.
- Oven Method: Preheat your oven to 180°C (or 350°F). Spread the seasoned cauliflower onto a baking tray, making sure the florets aren’t crowded or stacked on top of each other. Bake for 20 to 25 minutes, or until they’re tender but still have a little bite. You can check by poking one with a fork it should go in easily but not fall apart.
- Air Fryer Method: If you’re using an air fryer, preheat it to 180°C (350°F). Place the cauliflower inside in a single layer, just like in the oven method. Air fry for about 15 minutes. You can give the basket a gentle shake halfway through to help the florets cook evenly.
Cool It Down:
Once your cauliflower is cooked to perfection, take it out and let it cool for at least 10 minutes. This step is important! If you place the hot cauliflower right on top of the hummus, it can make the hummus runny and not as nice to eat. So be patient it’s worth it.
Build Your Plate:
Now comes the fun part: putting everything together! Grab a plate and spread a nice, thick layer of hummus across the bottom. Then, gently add the cooled cauliflower on top. Sprinkle on the pomegranate seeds for a pop of sweetness, toss on the toasted pine nuts for crunch, and finish with a sprinkle of fresh coriander. It looks colorful, smells amazing, and tastes even better.
Serve and Enjoy:
Finally, serve your roasted cauliflower masterpiece with a warm slice of naan or pita bread. You can eat it with a fork or scoop it up with the bread either way, it’s a winner. This dish is packed with flavor, and once you try it, you might just want to make it every week!

A handful of fresh coriander (chopped)
Hummus (for spreading on the plate)
Directions

- Roast or air-fry:
Oven method: Bake at 180°C (350°F) for 20–25 minutes until they’re soft but still a little firm.
Air fryer method: Air fry at 180°C (350°F) for about 15 minutes. Don’t forget to preheat! - Cool it down: Let the cauliflower rest for a bit. You don’t want it too hot when adding it to hummus.
- Build your plate: Spread hummus on your plate, pile on the cauliflower, sprinkle with pomegranate seeds, pine nuts, and chopped coriander.

Notes
- Don’t overbake! If the cauliflower gets too soft, it might turn mushy.
