I absolutely love the flavor of roasted aubergine. It’s soft, smoky, and perfect for soaking up all the spicy, creamy flavors of curry. Since I’ve been trying to eat less meat, I decided to swap chicken for roasted aubergine and let me tell you, it still tastes amazing!

This curry is full of warm spices, a creamy coconut base, and a satisfying texture, all without needing meat. So, if you’re on the lookout for a hearty, plant-based meal that doesn’t miss out on flavor this one’s for you!

Method

Roast the Aubergine:

Start by preparing the aubergine, which is the star of this dish. Chop one large aubergine into bite-sized cubes, trying to keep them fairly even in size so they roast uniformly. Spread the pieces out on a baking tray don’t overcrowd them, or they’ll steam instead of roast. Place the tray into a preheated oven at 240°C (464°F) and roast the aubergine for 20 to 30 minutes. You’ll know they’re ready when they’ve turned golden brown on the edges and are soft and slightly caramelized inside. Roasting the aubergine is key it adds a smoky depth and prevents the vegetable from becoming mushy in the curry.

Start the Curry Base:

While the aubergine is roasting, you can start building the flavor base for your curry. Heat about 1 tablespoon of sesame oil in a medium-sized cooking pot over medium heat. Once the oil is warm, add 1 tablespoon of chopped garlic and 1 tablespoon of chopped fresh ginger. Sauté them for around 2 minutes, just until their fragrance is released and they begin to lightly brown. This step brings warmth and depth right at the beginning of the dish.

Add Flavor:

If you’re using curry leaves (highly recommended if available), toss a few into the pot at this stage and let them sizzle for a few seconds. Then, add ½ a chopped onion and stir everything together. Let the onion cook for about 5–6 minutes, until it softens and turns slightly golden. This forms a flavorful, slightly sweet base that balances the spices beautifully.

Spice It Up:

Next, it’s time to layer in those warming spices that make this curry so cozy and rich. Add ¼ teaspoon each of cardamom powder, ground clove, and black pepper, along with ½ teaspoon of chili powder, 1 teaspoon of coriander powder, and 1 teaspoon of cumin powder. Don’t forget a pinch of salt to enhance all the other flavors. Stir the spices into the onion mix and let them toast gently for about a minute this helps bring out their essential oils and bold aromas.

Make It Creamy:

Now pour in ½ cup of passata (tomato puree) and ½ cup of coconut milk, stirring everything together until it becomes a smooth, reddish-orange sauce. Reduce the heat slightly and let the curry base simmer for around 10 minutes. This step helps the flavors meld and deepen. The sauce should thicken slightly and smell incredible at this point.

Finish the Dish:

Once the aubergine is done roasting, take it out of the oven and gently fold it into the simmering curry sauce. Stir carefully so the aubergine stays intact but gets well coated in the sauce. Let everything simmer together for an additional 5 minutes, just enough time for the aubergine to absorb the flavors of the curry without losing its lovely roasted texture.

Top & Serve:

Right before serving, sprinkle some freshly chopped coriander leaves over the top for a burst of freshness. If you’d like, add a spoonful of plain yogurt on each serving for a cool, creamy contrast to the spices. Serve warm with rice, naan, or any grain of your choice and enjoy every flavorful bite!

  • ¼ tsp ground clove

  • ¼ tsp black pepper

  • ½ tsp chili powder

  • 1 tsp coriander powder

  • 1 tsp cumin powder

  • Salt to taste

Directions

  • Start the Curry Base: While the aubergine is roasting, heat sesame oil in a pot. Add the garlic and ginger, and cook until they smell amazing (about 2 minutes).
  • Add Flavor: Toss in curry leaves if you have them, then add the chopped onion. Cook until the onion gets soft and slightly golden.
  • Spice It Up: Stir in all the spices cardamom, clove, pepper, chili, coriander, cumin, and salt. Let them mix with the onion for a minute.
  • Make It Creamy: Pour in the passata and coconut milk. Mix well and let it bubble gently for about 10 minutes, so the flavors come together.
  • Finish the Dish: Add the roasted aubergine into the pot. Stir gently to coat each piece with the sauce. Let it cook for another 5 minutes so everything blends nicely.
  • Top & Serve: Sprinkle chopped coriander on top and add a spoonful of plain yogurt for a creamy finish!

Notes

  • Don’t skip roasting the aubergine it’s what gives this dish that deep, smoky flavor.
  • Keep the heat low when adding coconut milk, or it can split and look curdled.
  • Stir gently once the aubergine is added, or it can break apart too much and get mushy.
  • Taste your curry before adding more salt some passata can be salty on its own.

Serving Suggestions

  • Serve it with steamed basmati rice, naan bread, or even quinoa.
  • Add a side of cool cucumber raita or a simple green salad for freshness.
  • If you like heat, add a little extra chili powder or fresh chopped green chilies on top!
