Hi friends!
If you’re someone who rushes in the morning or just loves waking up to something already made this is for you! These Blueberry Lemon Overnight Oats taste like dessert, but theyβre filled with good-for-you ingredients. Sweet blueberries, a zing of lemon, and creamy oats all come together in one happy jar. You make it at night, pop it in the fridge, and boom breakfast is ready when you wake up!
π©βπ³ Method:
Making the Blueberry Compote (Optional but Recommended):
Start by preparing the blueberry compote, which adds a sweet, jammy layer to the oats. Place 150g of blueberries in a small saucepan over medium heat. Let the berries cook down, stirring occasionally, until they begin to burst and release their juices. Keep cooking until the mixture thickens slightly into a compote-like consistency it should look like soft blueberry jam. This usually takes about 10 minutes. Once it’s done, remove the pan from the heat and let the compote cool completely. This step can be skipped if youβre short on time, but it adds an amazing burst of flavor!
Mixing the Oat Base:
In a clean jar or lidded container, add your 60g of rolled oats, 1 tablespoon of chia seeds, Β½ teaspoon of fresh lemon zest, and a gentle squeeze of lemon juice. Drizzle in 1 teaspoon of honey (or maple syrup if you prefer) for a bit of sweetness, then pour in 100ml of your favorite milk I used unsweetened soya milk. Stir everything together thoroughly so the chia seeds and oats soak evenly. This base is where the magic begins, as it will soak up the flavors overnight and turn creamy and thick.
Layering the Goodness:
Once the oat mixture is stirred well, itβs time to build the layers. Gently spoon half of the yogurt (around 20ml) on top of the oat base. Next, add a layer of the cooled blueberry compote this gives a nice contrast of texture and flavor. After that, add the remaining yogurt (another 20ml) right on top of the compote. Finish off your jar with a handful of fresh blueberries (about 75g), which add freshness and a pop of color.
Letting It Chill (Literally!):
Now itβs time to let the oats rest and do their thing. Put the lid on the jar tightly and place it in the refrigerator. Let it chill overnight, or for at least 20 to 30 minutes if you’re in a rush. This gives the oats and chia seeds time to absorb the liquid and become soft, thick, and pudding-like.
