A Recipe for Crispy, Puffy Perfection!

Hey friends! Have you ever had a warm, golden Yorkshire pudding? If not oh my, you’re in for a treat! These puffed-up little guys are crispy on the outside, soft in the middle, and the best sidekick for any roast dinner. I’m sharing both my regular and gluten-free versions, so no one misses out. And guess what? You can even freeze them ahead of time for busy days or holiday meals. Let’s get cooking!

Method

Whisk & Chill

To begin, grab a large measuring jug or mixing bowl. Pour in the milk and crack in the eggs, then whisk them together until smooth and frothy. Next, add the flour (plain for the regular version, or a mix of cornflour and gluten-free plain flour for the gluten-free version) along with a good pinch of salt. Keep whisking until you see no lumps your batter should be smooth and silky. Once everything is well mixed, place the jug into the fridge. Let it chill for at least one hour; if you can, leave it overnight. Resting the batter helps it become airy and gives the puddings a better rise when they bake.

Heat That Oven!

When you’re almost ready to bake, preheat your oven to 230°C fan or 250°C conventional. The high heat is really important it’s what helps the puddings puff up tall and crispy.

Oil Up

As the oven heats, take your muffin tray or Yorkshire pudding tin and pour about ¾ teaspoon of sunflower oil (or beef dripping for a richer flavor) into each cup. Make sure the oil covers the bottom and brush a little up the sides of each cup too. This step is key for easy removal later and gives your puddings that beautiful golden edge.

Smoke Signals

Once your oven has reached the right temperature, place the oiled muffin tray inside on the middle shelf. Let the oil heat for about 15–20 minutes, or until it’s smoking hot. Don’t rush this step if the oil isn’t hot enough, the batter won’t puff up properly.

Pour & Bake

Take the batter out of the fridge and give it another good whisk to make sure it’s nice and even. Now, working quickly and carefully, remove the hot muffin tray from the oven. Pour the batter evenly into each round. You should hear a strong sizzle as it hits the hot oil this is exactly what you want! Immediately return the tray to the oven and reduce the heat to 190°C fan. Now here’s the golden rule: do not open the oven door while they’re baking. Let them cook for 25 to 30 minutes, undisturbed, until they are fully risen, crispy, and a rich golden brown.

Serve or Save

When your Yorkshire puddings are done, take them out of the oven and gently lift them from the tray. Place them on a wire rack to cool slightly. You can serve them right away while they’re hot and fluffy, or let them cool completely, pop them into freezer bags, and freeze for later. When ready to reheat, there’s no need to thaw just bake at 190°C for a few minutes until warm and crisp again.

Ingredients

  • Regular Yorkshire Puddings

  • 200ml milk

  • 4 medium eggs

  • 100g plain flour

  • Good pinch of salt

  • Gluten-Free Yorkshire Puddings

  • 200ml milk

  • 4 large eggs

  • 150g cornflour

  • 50g gluten-free plain flour

  • Good pinch of salt

Directions

  • Whisk & Chill
In a big measuring jug, whisk together the milk and eggs. Then, add your flour (or flours if gluten-free) and salt. Whisk until the batter is smooth with no lumps. Now pop it in the fridge for at least an hour or even overnight! This helps them puff up nicely.
  • Heat That Oven!
Preheat your oven to 230°C fan or 250°C conventional. Yes, it needs to be very hot!
  • Oil Up
While the oven heats, pour about ¾ teaspoon of sunflower oil (or beef dripping for extra flavor) into each round of your muffin tray. Don’t forget to grease the sides too this helps your puddings pop out easily later.
  • Smoke Signals
Place the tray into the hot oven for 15–20 minutes. The oil needs to be super hot and just starting to smoke. That’s when it’s ready.
  • Pour & Bake
Take the batter out of the fridge, give it a good whisk again, and then quickly pour it into the hot muffin tray equal amounts into each round. It should sizzle when it hits the oil! Quickly return the tray to the oven (middle shelf), turn the heat down to 190°C fan, and don’t open the oven door until they’re done about 25–30 minutes.
  • Serve or Save
Once they’re tall, crispy, and golden brown, pop them out and place them on a wire rack. Serve right away or let them cool and freeze them. No need to defrost just reheat at 190°C for a few minutes.

Notes

  • Don’t skip the resting time in the fridge it helps the batter puff up.
  • The oil must be smoking hot before you pour in the batter, or they won’t rise properly.
  • Keep the oven door closed during baking, or they’ll fall flat.
  • Grease the muffin tray sides well to stop them from sticking.

Serving Suggestions

  • Perfect with roast beef and gravy
  • Delicious next to mashed potatoes and vegetables
  • Great as mini bowls for stew or cheesy fillings
  • Try a breakfast version with eggs and bacon!
