A Sweet and Tangy Christmas Side You’ll Want All Year Round!

Hi friends! Let me tell you about one of my favorite festive side dishes braised red cabbage. We didn’t grow up having it for Christmas, but the first time I made it about 15 years ago, it became an instant hit. It’s sweet, tangy, warm, and goes perfectly with cold meats, roasts, or even leftover turkey sandwiches. I always make it ahead of time, freeze it, then simply heat it on Christmas Day. And yes my version has pomegranate molasses, of course!

Method

Prep and Combine the Ingredients

First, I get all my ingredients ready. I shred the red cabbage, grate the apples, and finely chop the garlic and onions. Once that’s done, I place everything except the water into a large pot. This includes the cabbage, apples, onions, garlic, brown sugar, cinnamon stick, mixed spice, red wine vinegar, pomegranate molasses, butter (or a dairy-free alternative), salt, and pepper. I give it all a really good stir while the pot is on medium heat. This helps mix the flavors and begins to soften the vegetables just slightly.

Simmer on Low Heat

After about a minute of stirring, I put the lid on the pot and turn the heat down low. This is where the magic happens slow cooking allows the flavors to blend beautifully. I let it simmer gently for around 1 hour and 15 minutes. This might feel like a long time, but it’s really worth it! While it cooks, the cabbage turns tender, and the apples almost melt into the mixture.

Check for Moisture and Add Water if Needed

Very important step: I check the pot after 30 minutes to see if there’s still some liquid inside. If the cabbage looks a little dry, I add a splash of water just enough to keep it from sticking to the bottom. I keep checking every 15–20 minutes after that, and if it dries out again, I add a bit more water each time. I also give it a quick stir now and then to keep everything cooking evenly.

Final Texture and Taste

After the full cooking time, the cabbage should be soft, shiny, and packed with flavor. The apples will have blended in completely, giving the whole dish a gentle sweetness. I do a quick taste test and adjust the seasoning with a pinch more salt or vinegar if needed. Once it’s just right, I take it off the heat. At this point, you can either let it cool for freezing or serve it warm right away.

Necessary Tools
