These little bites are made with just a few ingredients, and guess what? They’re packed with protein and fiber too, thanks to the chickpeas. Method

Start by preheating your oven to 180°C (350°F). While the oven heats up, place a large baking tray inside. This step is super important the hot tray helps the crackers get nice and crispy. We want it piping hot when it’s time to bake, so don’t skip this part!
Making the Dough
Next, grab your food processor. Add in your drained and rinsed chickpeas, grated cheddar cheese, oil, salt, and if you like a bit more flavor, ½ teaspoon of garlic powder. Blend everything together until the mixture becomes smooth and sticky, like dough. You may need to scrape down the sides a couple of times. The dough should hold together when pressed this means it’s ready to roll.
Rolling Out the Dough
Now it’s time to shape the dough. Tear off two large pieces of baking paper. Lay one on your counter and place the dough on top. Flatten it a little with your hands. Then, place the second sheet of baking paper over the dough. Using a rolling pin or even a strong glass, roll the dough out between the two sheets. Try to roll it as thin as you can the thinner it is, the crispier your crackers will be once baked.
Cutting the Crackers
Once your dough is rolled thin, carefully peel off the top layer of baking paper. Using a knife, cut the dough into small square shapes. You can make them as big or small as you like, but bite-sized squares work best. For a fun touch, use a toothpick to poke a tiny hole in the center of each square this makes them look more like store-bought crackers!
Transferring to the Baking Tray
Here comes the slightly tricky part: moving your dough to the hot tray. Keep the cut dough on the bottom baking paper sheet, and gently lift the whole thing. Place it carefully onto the hot baking tray in the oven. Be gentle so the squares don’t slide around or break.
Baking the Crackers
Bake your crackers for 15 minutes at 180°C (350°F). If you rolled the dough thicker in some places, those areas might need a little more time, so keep an eye on them. You want the edges to turn golden and the centers to firm up.

- Roll out the dough between the papers until it’s very thin. The thinner, the crunchier!

- Carefully move the whole sheet of dough (with the bottom baking paper) onto your hot baking tray.

- After baking, turn off the oven but leave the crackers inside with the door open to cool. This helps them get even crunchier!
