Method
Rinse and Drain the Chickpeas
Start by opening your can of chickpeas and pouring them into a colander. Rinse them thoroughly under cold running water to remove any canning liquid and extra starch. Once rinsed, make sure to drain them really well. If you have time, you can even pat them dry with a clean towel or paper towel. This is a very important step if your chickpeas are too wet, they won’t get that satisfying crunch in the oven.
Season the Chickpeas
Next, place the dried chickpeas in a medium mixing bowl. Add 1 tablespoon of garlic powder, 1 tablespoon of tahini, 1 tablespoon of extra virgin olive oil, and a good pinch of salt. Using a spoon or spatula, mix everything together until the chickpeas are fully coated. Make sure every single chickpea gets some of the flavorful coating this is where the deliciousness comes from!
Prepare the Baking Tray
Take out a baking tray and line it with parchment paper if you want easier cleanup (totally optional but helpful). Pour the seasoned chickpeas onto the tray and spread them out evenly. Make sure they are in a single layer with a little space between each chickpea. If they are too close together or stacked on top of each other, they’ll steam instead of roasting and that means soft, not crunchy.
Bake the Chickpeas
Preheat your oven to 180°C (350°F). Once it’s ready, place your tray of chickpeas in the oven. Bake them for about 30 minutes, but be sure to check them at around 25 minutes. Every oven is a little different, so look for a golden brown color and crispy texture. If they need a few more minutes, that’s totally okay just keep an eye on them so they don’t burn.
Cool for Maximum Crunch
This last step is key! Once the chickpeas are done baking, remove the tray from the oven and let them cool completely. Don’t touch them yet cooling is what makes them extra crunchy! If you try them too soon, they might still feel a little soft. But if you wait 15–20 minutes, they’ll turn into the perfect crispy snack.
