Hey friends!
Do you ever get a craving for something sweet but still want to stay healthy? I’ve got the perfect little treat for you Dates Truffles! These are chocolaty (but don’t actually have chocolate), super yummy, and best of all, they’re vegan, gluten-free, and dairy-free. That means lots of people can enjoy them, even if they have food allergies!
I make these when I want a fast, no-bake snack that’s soft, rich, and tastes like dessert without being full of sugar. Let’s get into it!
Method
Blend It Up!
To start making these delicious Dates Truffles, gather all your ingredients and place them into a food processor. This includes the soft Medjool dates, coconut oil, water, cacao powder, vanilla extract, peanut butter, almond flour, and just a pinch of salt. It’s really important that your dates are soft, or else the dough won’t blend smoothly if they feel dry or firm, soak them in warm water for 5–10 minutes first and then drain. Once everything is in, blend on high for about 30 seconds. The mixture should turn into a thick, sticky dough that holds together easily. If it’s too dry, you can add a tiny bit more water just one teaspoon at a time.
Roll Time!
Once your dough is ready, it’s time to roll! Scoop out a small amount of dough using your hands or a spoon about the size of a tablespoon. Then, use your palms to roll it into a smooth, round ball. The dough should be just the right texture to shape easily without falling apart or sticking too much. If it’s too sticky, let it rest in the fridge for a few minutes to firm up. Continue rolling until all the dough is used up you should get around 10 to 12 bite-sized truffles.
Make It Fancy!
Now that your truffles are shaped, it’s time to dress them up! Pour a little extra cacao powder onto a plate and gently roll each truffle in the powder until it’s evenly coated. This step gives the truffles that extra-rich chocolate look and adds a light, dry coating that balances the soft texture inside. If you’re feeling creative, you could also roll them in crushed nuts, shredded coconut, or even sesame seeds!
Chill Out!
This last step is all about patience and trust me, it’s worth it. Place the finished truffles on a tray or plate and pop them into the freezer for about 30 minutes. This helps the coconut oil firm up and gives the truffles a more solid, fudgy texture. If you don’t want to freeze them, you can refrigerate them instead for 1–2 hours. I personally love them chilled they taste richer and have a better bite to them!
