Looking for something sweet, colorful, and super refreshing for a warm day? Let me tell you about this fruit jelly terrine I made and wow, it’s like summer in a slice! It’s soft, wobbly (in the best way), and packed with juicy berries and fruity flavor. The best part? It only uses 3 simple ingredients (plus fruit!), and it’s packed with protein too!

This is the perfect dessert for BBQs, picnics, or just keeping in the fridge for when you want something light and fun.

Method (In Depth):

Mix It Up:

To start, grab your mixing bowl or shaker and pour in 300ml of water. Then add 1 scoop of peach clear whey protein (or whichever flavor you love most I’ve tried cranberry raspberry and rainbow candy too, and they’re all delicious!). Give the mixture a good shake or stir until the whey powder fully dissolves and you’re left with a smooth, juicy liquid that smells amazing. This mix will be the base of your jelly.

Add the Gelatine:

Next, pour the whey mix into a small pan. Sprinkle 12 grams (1 sachet) of gelatine powder evenly across the top of the liquid. Don’t mix it right away this is the blooming stage, and it’s super important! Let the gelatine sit for about 5 minutes. During this time, the gelatine will soak up some of the liquid and soften. If you skip this step or rush it, your jelly may not set properly.

Heat Gently:

After the gelatine has bloomed, turn the stove on to low heat. Gently warm up the mixture, making sure to whisk it slowly and constantly. This helps the gelatine melt smoothly into the liquid. Be careful not to let it boil if it gets too hot, the gelatine can lose its setting power and you’ll end up with a runny mess instead of a lovely jelly. It should only take about a minute for the gelatine to dissolve completely, leaving you with a warm, clear mixture.

Add the Berries:

Now it’s time to get your loaf tin ready. Start by placing 300g of fresh berries like halved strawberries, blueberries, and raspberries into the bottom of the tin. Here’s a fun trick: place the prettiest berries at the bottom because once your jelly is set and flipped, they’ll be on display at the top! Spread them out evenly so every slice will look beautiful and taste fruity.

Pour & Chill:

Once your whey and gelatine mix is ready, let it cool for a minute so it doesn’t cook the berries. Then, slowly pour the warm liquid over the fruit in the loaf tin. Pouring gently helps keep the berries in place so your final terrine looks neat and layered. Once it’s all in the tin, pop it into the fridge and let it chill for at least 4 hours (overnight is even better!). When it’s fully set, it should feel firm but jiggly kind of like a fruit-packed jelly pillow.

Slice & Serve:

To serve your beautiful jelly terrine, run a knife gently around the edges of the loaf tin, then flip it onto a serving plate. You can slice it into even pieces, and you’ll see all the colorful berries sparkling inside. It’s cool, sweet, and totally refreshing perfect for a sunny day or a light after-meal treat!

Necessary Tools:

  • Loaf tin (glass or non-stick works best)

Ingredients

  • 1 scoop peach clear whey protein (or your favorite flavor!)

  • 300ml water

  • 1 sachet gelatine powder (12g)

  • 300g fresh berries (like strawberries, blueberries, and raspberries)

Directions

  • Mix it up: Pour your water into a shaker or bowl and add your scoop of clear whey protein. Shake or stir it well until it’s all combined.
  • Add the gelatine: Pour the mix into a pan. Sprinkle your gelatine powder over the top and let it bloom for about 5 minutes. This just means the gelatine will soak and get soft super important!
  • Heat gently: Turn on the stove to low heat. Warm the mixture slowly and whisk it gently. Don’t let it boil! Once the gelatine melts completely, you’re done.
  • Add the berries: Pop your pretty berries into the bottom of your loaf tin (put the nicest-looking ones first they’ll show on top when flipped!).
  • Pour & chill: Carefully pour your warm liquid over the fruit. Let it cool a little, then place it in the fridge for at least 4 hours until it’s totally set.
  • Slice & serve: When it’s firm, flip it onto a plate and slice into shiny, fruity pieces of happiness. Yum!

Notes

  • Don’t skip the blooming time for the gelatine it needs to soak before heating or it won’t set right.
  • Never boil the liquid too much heat can break the gelatine and it won’t firm up.
  • Pour the liquid slowly over the fruit so it doesn’t move everything around.

Serving Suggestions:

  • Serve chilled with a dollop of Greek yogurt or coconut whipped cream.
  • Slice into small cubes for a fun party snack.
  • Add mint leaves or a sprinkle of lemon zest on top for a fancy finish.
  • Perfect as a post-workout snack with an extra protein boost.

Fun Fact:

Did you know clear whey protein comes in fruit flavors that taste like juice? It makes your dessert sweet without needing sugar how cool is that?

Conclusion:

This fruit jelly terrine is honestly one of the easiest and prettiest desserts I’ve made. It’s fun, fresh, and feels like eating a fruity cloud. I love how flexible it is you can try different fruits, flavors of whey, and even shapes if you want to get creative.

It’s also a sneaky way to get more protein and hydration without any added sugar. Win-win!

Let me know if you try it just don’t blame me if you eat the whole thing in one sitting!
