Hi friends!
I usually love making simple, quick meals. But once in a while, I like to go all out and cook something really special. This weekend, I tried a recipe from my colleague Sudesh he’s a fantastic cook and a total foodie! When he shared his Kashmiri Biryani recipe with me, I knew I had to try it. And wow… this dish turned out better than any restaurant biryani I’ve ever had!
It’s full of fragrant spices, juicy lamb, and fluffy basmati rice. It takes some time and love, but it’s totally worth every second (and calorie). Let’s get into this flavorful adventure together!
Method
Marinate the Lamb
The first and most important step is to marinate the lamb. In a large mixing bowl, combine the plain yogurt with turmeric powder, chili powder, and salt. Stir everything together until it becomes a smooth marinade. Then, add in the lamb cubes and coat them really well in this mixture. Make sure every piece of meat is covered. This helps the spices soak into the lamb and makes it super flavorful when cooked. Let the lamb sit and marinate for at least 1 hour you can even prepare it earlier and leave it longer in the fridge for deeper flavor.
Partially Cook the Rice
While the lamb is marinating, you can start on the rice. Wash the basmati rice a few times until the water runs clear. Then, bring a big pot of salted water to a boil. You can add a bit of butter to the water if you like it helps make the rice extra tasty. Add the rice and cook it until it’s about 70% done. This means the grains should still have a little bite in the center. You don’t want them fully cooked yet because they will finish cooking during the final steaming. Once done, drain the rice and set it aside.
Cook the Lamb
Now it’s time to build that rich, aromatic base. In a large pot, heat the ghee over medium heat. Once it’s hot, add the bay leaves first. Let them sizzle for a few seconds. Then, add in all the whole spices black cardamoms, green cardamoms, cinnamon sticks, cloves, and shahi jeera. Stir everything for about a minute to release their wonderful aroma. Next, add the marinated lamb (with all the marinade) into the pot. Turn the heat up to high and begin stir-frying the lamb. Keep stirring frequently for around 15–20 minutes until the lamb starts to brown slightly and the yogurt begins to reduce. Once the lamb is well-sealed and the marinade starts sticking, reduce the heat to medium and add the ground spices coriander powder, garam masala, nutmeg powder, and mint powder. Stir everything well so the spices coat the meat evenly. Continue cooking until the yogurt has completely vanished and the mixture looks rich and thick. Now, pour in 250 ml of water, stir, cover the pot, and let the lamb simmer gently for another 20–30 minutes or until the meat is tender and fully cooked. After that, turn off the heat and let the lamb cool slightly, keeping it covered to trap all that delicious aroma.
Layer the Biryani
This is where it all comes together beautifully. Butter the bottom and sides of a deep pot or Dutch oven this helps prevent sticking and adds flavor. Begin by adding a layer of the partially cooked rice, then a layer of the cooked lamb. On top of the lamb, sprinkle some of your garnishes: chopped mint, coriander, fried onions, cashews, and raisins. Drizzle a little saffron milk over the top for color and aroma. Repeat these layers rice, lamb, garnish until everything is used up, finishing with a final layer of rice and a generous topping of fried onions and nuts. This layering is what makes every bite of biryani so exciting and balanced!
Final Steam
Once your layers are complete, it’s time for the dum (steam) cooking stage. Seal the pot with a tight lid. If your lid isn’t tight-fitting, you can wrap the top with foil before putting on the lid to trap the steam. Place the pot on the lowest heat setting and let it steam gently for 15–20 minutes. This step helps all the flavors come together and allows the rice to finish cooking, soaking up the rich lamb juices and spices.

- Be careful not to overcook the rice in step 2 too soft and it’ll turn mushy in the final steam.
- When layering, spread everything evenly to get balanced flavors in every bite.
- Use a heavy-bottomed pot for the final steam so it doesn’t burn on the bottom.

Serving Suggestions
- Serve it with cool cucumber raita or mint yogurt dip.
- A side of salad or pickles adds freshness.
- Don’t forget a chilled glass of lassi or lemon water!
