Hey friends! Today I’m sharing a Lebanese-inspired salad that’s anything but boring. It’s full of color, flavor, and crunch and it comes with juicy, spiced chicken and a creamy yogurt-tahini sauce. This is actually a fun twist on a restaurant salad I tried once, but honestly, I think this version is even better! It’s high in protein, full of fiber, and perfect for lunch or dinner.
Method
Marinate the Chicken
Start by preparing the chicken marinade. In a medium container with a lid, add the chicken breast cubes along with the yogurt, lemon juice, paprika, cinnamon, oregano, ginger powder, salt, black pepper, oil, tomato paste, and minced garlic. Mix everything very well so that every piece of chicken is fully coated in the marinade. The yogurt and lemon juice help tenderize the meat, while the spices give it that rich Lebanese flavor. Once it’s all mixed, cover the container and place it in the fridge. Let it marinate for at least 4 hours, but overnight is even better if you have the time. This step is super important to make the chicken flavorful and juicy.
Cook the Chicken
After marinating, remove the chicken from the fridge and let it sit for a few minutes to take the chill off. Heat a frying pan over medium heat and add a tiny drizzle of oil if your pan needs it. Place the chicken cubes into the hot pan, making sure they are spread out so they cook evenly. Let them cook for about 10 to 12 minutes, turning the pieces occasionally so all sides get golden and cooked through. You’ll know it’s ready when there’s no pink in the center and the outside is nicely browned. Once done, turn off the heat and let the chicken rest while you prepare the rest of the salad.
Make the Pita Croutons
To prepare the croutons, take one pita bread and cut it into small cubes. Place the cubes in a bowl and toss them with a bit of oil, salt, and pepper. You can cook them in two ways. To bake them, spread the cubes out on a baking tray and bake in a preheated oven at 350°F (180°C) for about 10 minutes, or until crispy and golden. To pan-fry, heat a small amount of oil in a pan and cook the pita cubes for a few minutes, stirring often so they don’t burn. Keep a close eye these crisp up fast!
Mix the Sauce
In a small mixing bowl, combine the yogurt and tahini. Then add the salt, cumin, paprika, garlic powder, and a pinch of black pepper. Stir it all together until smooth and creamy. This sauce has a rich, nutty flavor from the tahini and a little tang from the yogurt. It goes perfectly with the spicy chicken and fresh veggies.
Assemble the Salad
Now it’s time to put everything together! In a large salad bowl, add the sliced lettuce, chopped tomatoes, cucumber, and radishes. Sprinkle in the chopped mint and add the cubes of feta cheese. Next, add the cooked chicken on top. Then add the crispy pita croutons right before serving so they stay crunchy. Finally, drizzle the creamy yogurt-tahini sauce over the top. You can give the salad a gentle toss to mix everything together, or leave it layered for a more colorful look. Either way, it’s delicious!
