Have you ever tried mango in a salad? It’s sweet, juicy, and totally transforms a simple dish into something special. Today, I’m sharing one of my favorite light and creamy recipes Mango and Lentil Salad! It’s fresh, filling, and made with real ingredients that are so good for you. Plus, it comes together in just a few steps!
Method
Chop the Veggies
The first step in making this refreshing salad is to prepare your ingredients. Start by dicing the cucumber into bite-sized pieces these will add a lovely crunch. Then, chop the tomatoes; cherry tomatoes or any juicy variety work great here. Thinly slice half a red onion, which gives the salad a little sharpness to balance the sweetness of the mango. Next, finely chop half a bunch of fresh parsley for a burst of herby flavor. Finally, peel and dice a ripe mango into small cubes. You want it firm enough to hold its shape but still juicy and sweet. Add all these colorful ingredients, along with your cooked and cooled lentils, into a large mixing bowl.
Make the Dressing
Now, let’s get into the creamy tahini dressing. In a small bowl or a jar with a lid, combine 2 tablespoons of olive oil, 2 tablespoons of water, 3 tablespoons of tahini, and 2 tablespoons each of lemon juice and rice vinegar. Add in 1 minced or grated garlic clove for flavor, plus 1 teaspoon of agave syrup to give it a hint of sweetness. Sprinkle in some salt and pepper to taste. Mix or shake it all together until smooth and creamy. If the dressing seems too thick, add a little more water just a teaspoon at a time until it reaches your preferred consistency. It should be pourable but still rich and velvety.
Mix It All Up
Once your dressing is ready, pour it over the chopped veggies and lentils in the large mixing bowl. Using a large spoon or salad tongs, gently mix everything together, making sure all the ingredients are coated evenly with the creamy dressing. Be gentle with the mango and lentils you don’t want to mash them! The goal is to keep everything whole and beautifully mixed so every bite has a bit of everything.
Serve and Enjoy
Now comes the best part serving and enjoying your delicious mango and lentil salad! You can serve it immediately at room temperature, or chill it in the fridge for 15–30 minutes if you prefer a colder salad. Notes
- Make sure the lentils are fully cooked and cooled before you mix them in, or they’ll make the salad too soft or warm.
