Hey there, foodie friends!
Over the weekend, I made something so tasty I just had to share it with you. It’s called arayes, and they’re Lebanese-style meat-stuffed pitas crispy on the outside, juicy on the inside, and totally drool-worthy! I wanted something fresh and healthy on the side, so I made a crunchy herby salad that pairs perfectly.

Whether you’re grilling outdoors or making these in the kitchen, this meal is perfect for sunny days and summer vibes. Let’s get cooking!

Method (In Detail)

Prep the Veggies

First, start with the cucumber. Slice it in half lengthwise, and use a spoon to gently scoop out the seeds this step helps keep the salad from getting watery later on. Once the seeds are removed, lay the cucumber halves flat-side down and cut them into thin half-moon shapes. These give a nice crunch without being overwhelming.

Next, move on to the cherry tomatoes. Wash them well and slice each one into quarters. This size allows the juicy flavor to burst through in every bite without overpowering the salad.

For the red bell pepper, slice it in half and remove the seeds and white membrane from the inside. Cut the pepper into thin strips first, then turn the strips and dice them into small squares. This adds sweetness and crunch to the mix.

Finally, prep the white onion. Cut off one end and peel it, then slice it into a quarter. Now slice it very thinly I used a French-style cut, which gives you elegant, curved slices that blend beautifully into the salad. If you’re sensitive to raw onions, you can soak the slices in a bowl of cold water for 5–10 minutes to mellow out the flavor.

Once all the vegetables are prepped, place them in a large mixing bowl. This is where the flavors will come together, so make sure your bowl has enough room to toss everything well.

Make the Dressing

Now let’s move on to the dressing, which is what really brings this salad to life. Start by juicing half of a lemon into a small bowl. This fresh citrus kick gives the salad its zingy brightness.

Add two tablespoons of red wine vinegar to the lemon juice. Then pour in a generous glug of extra virgin olive oil about two tablespoons. This creates a nice balance of tangy and smooth.

Next, finely chop a small handful of fresh parsley and about four sprigs of mint. These herbs are the stars of the show, adding cool, fresh flavor that pairs beautifully with grilled meats like the meat-stuffed pita.

Now add in the herbs, along with half a clove of garlic that has been minced very finely. Sprinkle in half a teaspoon of sumac a tangy Middle Eastern spice that adds a subtle lemony kick. Finish it off with a good pinch of sea salt.

Use a small whisk or fork to stir the dressing until it’s well combined. You should see a lovely herb-speckled vinaigrette that smells fresh and vibrant.

Toss and Serve

Now it’s time to bring it all together! Pour the dressing over your bowl of chopped vegetables. Use salad tongs or clean hands to gently toss everything until every bite is coated in the dressing.

Take a moment to admire how colorful and fresh it looks the green herbs, red tomatoes, and shiny cucumber slices all come together beautifully.

Serve the salad right away next to your hot and crispy meat-stuffed pitas. The cool, zesty salad balances out the rich, savory meat, making each bite feel light and satisfying. And that’s it your refreshing and flavorful salad is ready to go!
