Mix It All Up

To start your dough, grab a large mixing bowl. Pour in the bread flour and yeast first, followed by the warm water. Make sure the water is not too hot it should feel like warm bath water. Give the mixture a quick stir with a spoon or spatula just to get things going. After that, sprinkle in the salt and stir everything together until it’s well combined. The dough will look shaggy and feel very sticky, but that’s exactly how it should be no need to knead or worry about making it smooth. Just mix until no dry flour remains.

Let It Rise

Next, cover your bowl with cling film (or a clean kitchen towel) to keep the dough from drying out. Now comes the resting period. Let the bowl sit in a warm, cozy spot for 2 to 3 hours. This is when the magic happens! The yeast will start working and create lots of little bubbles in the dough. If it’s a cold day or your kitchen isn’t warm, place the bowl in the oven with the oven light on but make sure the oven is turned off. The light gives just enough warmth for the dough to rise properly.

The dough will be sticky and jiggly don’t try to knead it. Instead, use your spatula to fold the sides of the dough in toward the center about 5 to 6 times. This helps form a roundish shape, and those folds help build the structure of the bread. Be gentle so you don’t pop the bubbles created during rising.

Get Ready to Bake

Now tear or cut a piece of baking paper and place your shaped dough right on top of it. When your cast iron pot is hot and your oven is ready, carefully take the pot out (use oven mitts it’s very hot!). Lift the baking paper with the dough and place it gently into the hot pot. Be quick and confident here don’t worry if it’s not perfectly centered. Put the lid on the pot and place it back into the oven right away.

Bake Time

Bake the bread with the lid on for 30 minutes. This helps trap steam and gives the bread a nice rise and chewy crust. After 30 minutes, remove the lid and bake for another 12 minutes. This second part of baking allows the top of the bread to get that deep golden-brown color and crispy texture we all love.

Let It Rest

Once baking is complete, carefully take the pot out of the oven and lift your bread out using the edges of the baking paper. Ingredients

  • 2 tsp active dry yeast

  • 2 tsp salt

  • 375ml warm water (this is very important!)

Directions

  • Mix it all up! In a big bowl, mix the flour, yeast, and warm water. Stir it a little, then add the salt. Mix again until everything is combined. The dough will be sticky don’t worry, that’s normal!
  • Let it rise. Cover the bowl with cling film and leave it in a warm spot for 2 to 3 hours. (If it’s cold in your house, try putting it in the oven with just the light on. Don’t turn the oven on yet!)
  • Preheat your oven. When the dough has risen and looks bubbly, preheat your oven to 230°C (450°F).
    Put your cast iron pot with lid inside to heat up. This is super important so the bread gets a great crust!
  • Shape the dough. Lightly flour your clean countertop. Use a spatula to gently scrape the dough out of the bowl. Don’t touch it too much it’s delicate! Fold the sides in with your spatula 5–6 times until it looks roundish.

  • Bake time! Bake with the lid on for 30 minutes, then remove the lid and bake for another 12 minutes until the top is golden and crusty.
