Let me tell you about one of my favorite veggie snacks Parmesan Carrot Chips! These are crispy, cheesy, and totally addictive. If you’ve ever had a hard time eating enough veggies, this recipe will change that. Once you try carrots this way, you won’t want to stop! They’re roasted to perfection with Italian herbs and garlic, and the Parmesan adds the perfect crunchy topping. I also like to dip them in a spicy-sweet yogurt sauce. Yum!
Method
Chopping the Carrots
Start by washing and peeling your carrots to remove any dirt or tough skin. Then, chop them into chip-like shapes. You can go for long, thin sticks like French fries or cut them into round slices. It’s totally up to you. The most important thing is to keep the pieces similar in size and thickness. This helps them cook evenly in the oven and prevents some from burning while others are still undercooked.
Seasoning the Carrots
Place the chopped carrots into a large mixing bowl. Add 2 tablespoons of oil (I usually use olive oil, but any cooking oil you like will work). Then sprinkle in 50 grams of grated Parmesan cheese, 1 teaspoon of garlic powder, 1 teaspoon of Italian herbs, and 1 teaspoon of paprika. Use your hands or a spatula to toss everything together until all the carrot pieces are well-coated with the seasoning and cheese. The oil helps the spices stick and the Parmesan gives a crispy, savory topping once baked.
Spreading on the Baking Sheet
Now line a baking sheet with parchment paper or spray it lightly with non-stick cooking spray. Spread the carrots out in a single layer on the sheet. Make sure they are not overlapping, this part is super important! If the carrots are too close together, they will steam instead of roasting, and you won’t get that crispy texture we’re going for.
Baking the Carrot Chips
Preheat your oven to 180°C (or 350°F). Once hot, place the baking sheet into the oven and bake the carrot chips for 20 to 25 minutes. At around the halfway point (about 10 to 12 minutes in), take the sheet out and gently flip each carrot piece using a spatula or fork. This helps both sides get nice and golden brown. Keep a close eye on them during the last few minutes, Parmesan can brown quickly, and we want crispy, not burnt!
Making the Hot Honey Yogurt Dip (Optional)
While the carrots are baking, you can prepare the dip if you’d like. In a small bowl, mix together 2 tablespoons of Greek yogurt, 2 teaspoons of mayonnaise, 1 teaspoon of chili oil, and 1 teaspoon of honey. Add a pinch of salt and a little garlic powder to taste. Stir it all until smooth. This creamy dip is sweet, spicy, and tangy all at once perfect for dipping your crispy carrot chips!

For the chips:
3 carrots
2 tbsp oil (olive oil or your favorite)
50g grated Parmesan cheese
1 tsp garlic powder
1 tsp Italian herbs
1 tsp paprika
For the hot honey yogurt dip (optional but amazing):
2 tbsp Greek yogurt
2 tsp mayonnaise
1 tsp chili oil
1 tsp honey
A pinch of salt and garlic powder
Directions
- Chop the carrots into chip shapes. You can make them look like fries long and skinny or go for circles. Just try to keep them even so they cook the same.
 - Add to a bowl. Pour in the oil, sprinkle on the Parmesan, garlic, herbs, and paprika. Mix until all the carrot pieces are nicely coated.
 - Spread out on a baking sheet. Make sure they don’t overlap this helps them get crispy instead of soggy.
 - Bake at 180°C (350°F) for 20–25 minutes.
 - Flip halfway through baking to help both sides get golden and crisp.
 - Optional dip: Mix all the sauce ingredients together in a small bowl. Done!

Notes
- Don’t overcrowd the baking sheet if they’re touching too much, they’ll steam instead of crisp.
 - Cut your carrots evenly so they cook at the same speed.
 - Watch the oven near the end Parmesan can burn quickly if it’s left too long.
 - If your oven runs hot, check the carrots at the 18-minute mark.
