Hi friends!
I’m so excited to share a new favorite recipe from my kitchen Pasta alla Norma! This dish is inspired by a trip to sunny Sicily 🇮🇹, where I kept seeing it in every single restaurant. I had to try it and now I make it at home whenever I want something simple, cozy, and full of flavor.
The star of this dish is aubergine (also called eggplant), which is super common in Sicilian cooking. It mixes perfectly with a warm tomato sauce, a sprinkle of cheese, and of course, pasta! It’s perfect for a midweek dinner that tastes like a vacation in Italy.
Method:
Prepping the Aubergine
Start by washing your aubergine and cutting off the top. Then, carefully chop it into bite-sized cubes. Try to keep the pieces roughly the same size so they cook evenly. Aubergine can soak up oil quickly, so don’t worry if it looks dry at first it will soften beautifully while cooking.
Cooking the Aubergine and Garlic
In a large pan or skillet, heat 1–2 tablespoons of olive oil over medium heat. Once the oil is warm, add your chopped garlic and stir it for about 30 seconds until it smells nice and fragrant but don’t let it burn! Now add the chopped aubergine to the pan. Cook everything together for about 8–10 minutes, stirring occasionally. The aubergine should turn soft and golden brown. If the pan gets too dry, feel free to add a tiny splash of water or a little more oil to keep it moving.
Making the Sauce
Once your aubergine is cooked, pour in the tomato passata. If you’re using fresh tomatoes instead, make sure they’re already cooked down into a smooth sauce. Stir everything well so the aubergine is fully coated. Add salt and pepper to taste, a pinch of chili flakes (if you like a little spice), and the all-important capers. Capers bring a special salty and tangy flavor that gives this dish its real Sicilian flair. Let the sauce simmer on low heat for about 10–15 minutes while you cook your pasta.
Cooking the Pasta
While your sauce is simmering, bring a large pot of water to a boil. Add a big pinch of salt to the water it makes the pasta taste better! Once it’s boiling, add your pasta and cook it according to the instructions on the package. Stir it once or twice so it doesn’t stick together. When it’s perfectly al dente (firm but not hard), drain it using a colander or strainer.
Mixing and Serving
Now the fun part put it all together! Add the cooked pasta directly into the pan with the aubergine-tomato sauce. Gently stir until the pasta is fully coated in all that delicious sauce. Serve the pasta hot and fresh, topped with a generous sprinkle of Parmesan cheese or salted ricotta if you can find it. For an extra touch of flavor and freshness, feel free to add some torn fresh basil on top.

minutesIngredients
1 large aubergine (eggplant)
1½ cups tomato passata (or fresh tomatoes cooked down into a sauce)
1 tbsp capers
Salt and pepper, to taste
A pinch of chili flakes (optional but adds a nice kick!)
200g your favorite pasta
2 cloves garlic, chopped
Olive oil, for cooking
Grated Parmesan cheese (or salted ricotta if you can find it for an authentic twist)
Directions
- Chop the aubergine into bite-sized pieces.
- Heat some olive oil in a large pan and cook the aubergine with chopped garlic until soft and golden.
- Add the tomato passata to the pan and stir.
- Sprinkle in salt, pepper, chili flakes, and the very important capers! These little guys give the sauce a salty, tangy flavor that really makes it pop.
- Let the sauce simmer gently while you cook your pasta.
- Boil your pasta according to the package directions. Drain it and mix with the sauce.
- Serve hot with a big sprinkle of Parmesan (or salted ricotta if you can find it!).
Notes
- Don’t overcrowd the pan when cooking the aubergine. If the pieces are piled up, they’ll steam instead of brown, and you want that golden color!
- Make sure to salt the sauce slowly and taste as you go. Capers are salty already, so you don’t want to overdo it.
- If using fresh tomatoes, cook them long enough until they break down into a smooth sauce.

Serving Suggestions
- I love to serve this with a simple green salad on the side and maybe a slice of garlic bread.
- It’s also great with a drizzle of extra virgin olive oil on top for extra flavor.
- Want to make it fancy? Add some fresh basil leaves for color and aroma!
Fun Fact
Pasta alla Norma is named after a famous opera called Norma by Italian composer Vincenzo Bellini. Just like the opera, this dish is dramatic in the best way!
Conclusion
There you have it Pasta alla Norma, straight from the heart of Sicily to your cozy kitchen. It’s full of flavor, easy to make, and feels a little bit fancy even on a busy night. Whether you use Parmesan or go on the hunt for salted ricotta, I know you’re going to love every bite.
Happy cooking and buon appetito!
