I’ve been waiting forever to make something yummy with peaches, and guess what? I finally did it! Every time I brought peaches home, we ended up eating them before I could even start baking. But not this time! I made a fresh and light Peach Galette, and it turned out so good I had to share it with you all.
This recipe is inspired by Ottolenghi, but I made a healthier version that still tastes amazing. It’s super easy to make (I got it right the first time!), and there’s a surprise ingredient that makes it extra special lime!
Let’s jump right into it!
Method
Slice & Marinate the Peaches
First, grab three firm peaches you don’t want them too soft or ripe, as they need to hold their shape during baking. Slice them thinly and place them into a bowl. Now, squeeze the juice of one lime over the peaches, and add about 30 grams of sugar along with 3 tablespoons of your chosen sweetener (a zero-calorie one works great here). Toss in a few sprigs of fresh rosemary this adds a lovely herby aroma that pairs beautifully with the sweetness of the peaches. Gently stir everything together, making sure the slices are nicely coated. Cover the bowl and let the mixture marinate for about 40 minutes. This helps draw out the juices, soften the fruit slightly, and infuse it with that bright citrus and rosemary flavor.
Get Your Pastry Ready
While your peaches are marinating, take your puff pastry sheet out of the fridge and let it come to room temperature slightly so it’s easier to work with. Place it on a flat surface and cut it into a rough circle you can use an upside-down plate as a guide. Once your peaches have finished marinating, carefully drain them but make sure to keep the juice you’ll need it later for a delicious syrup. Set the peach slices aside for now.
Build the Galette
Take your circular puff pastry and lay it flat on a baking tray lined with parchment paper. Begin layering your drained peach slices in the center of the pastry, creating a spiral or fan shape if you’d like to make it extra pretty. Be sure to leave about 2 inches of space around the edges. Once all the peaches are laid out, gently fold the pastry edges inward over the fruit, pleating as you go to create that rustic, free-form tart look. If you want a beautifully golden crust, beat one egg and lightly brush the folded edges with it. This step is optional but highly recommended.
Bake – Round One
Preheat your oven to 180°C (about 350°F). Once it’s ready, place your galette into the oven and bake for 20 minutes. During this time, the crust will puff up and start to turn golden brown, while the peaches begin to soften further and release even more of their flavor. Keep an eye on it around the 18-minute mark to avoid over-baking.
Make the Lime Cream Cheese Spread
While the galette is baking, you can prepare the magical lime spread that brings this dessert to life. In a small bowl, combine 150g of light cream cheese, 1 tablespoon of your sweetener, and the zest of one lime. Mix well until smooth and creamy. Pop this mixture into the fridge and let it chill for at least an hour. This rest time allows the flavors to blend beautifully it’s zesty, slightly sweet, and makes the perfect cool topping for the warm galette.
Make the Peach Syrup
Remember that leftover juice you saved from marinating the peaches? Now it’s time to turn that into a syrup. Pour the juice into a small saucepan and add 1 tablespoon of sugar and 1/2 teaspoon of cornflour. Stir well to dissolve, then cook it over medium heat for a few minutes, stirring constantly. The cornflour will help thicken the mixture slightly into a syrupy glaze that’s bursting with citrusy-peach flavor. Once it thickens just a bit, remove it from the heat and set it aside.
Final Bake
After the galette has baked for 20 minutes, take it out of the oven and gently pour the warm syrup evenly over the peach slices. This not only adds extra flavor but also gives the galette a shiny, caramelized finish. Return the galette to the oven and bake for an additional 10 to 15 minutes. This final step allows the syrup to set and caramelize slightly, while the crust becomes perfectly crisp. Once it’s done, remove it from the oven and let it cool completely. It’s actually best served cold the flavors really shine after some time in the fridge.

- Slice & Marinate the Peaches Cut the peaches into thin slices but make sure they’re still firm. In a bowl, mix the juice of 1 lime, 30g sugar, sweetener, and a little rosemary. Add the peach slices and let them marinate for 40 minutes. This adds flavor and softens them just a bit!
- Get Your Pastry Ready Roll out your puff pastry and cut it into a circle (you can use a plate as a guide). Drain the peaches and save the juice don’t throw it away!
- Build the Galette Lay the peach slices in the center of the pastry. Fold the edges of the pastry inward, like a cozy blanket. Brush the edges with a beaten egg for a golden crust (optional).

- Final Bake Pour the syrup over the peaches and pop the galette back in the oven for another 10–15 minutes. Once it’s done, let it cool before slicing.
Notes
- Don’t use soft peaches they get mushy and won’t hold their shape.
- Chill the lime spread the flavors come together much better.
- Keep an eye on the crust! Puff pastry can burn fast once golden.
- Always save the marinating juice it makes the peach syrup extra flavorful!
