Challenge brings something fancy but super fun to make: Salmon en Croute! That’s just a fancy way of saying salmon wrapped in puff pastry. And no, I didn’t come up with this recipe myself! I saw it on @emthenutritionist’s page, and it looked too good not to try. So I followed her steps, and wow… it was even better than it looked.

This dish is crispy on the outside, juicy and lemony on the inside, and served on top of a creamy leek and spinach sauce. It feels like something you’d eat at a restaurant, but it’s easy enough to make at home even if you’re just cooking for yourself.

Method

Prep the Oven

First things first get your oven preheating to 180℃ (or 350℉). Starting with a hot oven is super important for puff pastry, so it puffs up nice and golden while the salmon cooks perfectly inside.

Get the Salmon Ready

Now take your skinless salmon fillet and pat it dry using a paper towel. This step helps the seasoning stick and keeps the pastry from turning soggy later. Rub the top of the salmon with garlic purée for that yummy, mellow flavor. Then, season it with salt, a pinch of pepper, a good sprinkle of lemon zest, and just a little squeeze of lemon juice. It gives the fish a fresh, zingy taste that works so well with the buttery pastry.

Wrap It Up in Pastry

Next, grab your ready-rolled puff pastry and unroll it onto a clean surface or parchment paper. Cut out a rectangle just slightly larger than your salmon fillet this will be the base. Then, take another rectangle of the same size and slice it into long thin strips. These strips will become the top layer of the pastry (this style is called a lattice). Place the salmon fillet directly onto the base layer. Beat an egg in a small bowl and use a pastry brush to lightly coat the edges of the pastry with the egg wash. This helps seal everything together. Start placing your pastry strips over the salmon in a crisscross pattern kind of like weaving a basket. Once you’re happy with the look, brush the whole thing again with more egg wash to give it that lovely shine after baking.

Bake It

Transfer your wrapped salmon carefully onto a baking tray. Slide it into the preheated oven and let it bake for 20 minutes, or until the pastry turns puffed up and golden brown. While that’s happening, you can move on to making the creamy veggie sauce.

Make the Creamy Veggie Bed

In a nonstick frying pan, heat a splash of olive oil and toss in your finely sliced leek with a little salt. Let it cook for about 5 minutes, but don’t let it brown you want the leeks soft and sweet, not crispy. Stir in more garlic purée and cook for a few more minutes so it all smells amazing. Next, add in a large handful of spinach and let it wilt down. Pour in the chicken stock and stir gently. Sprinkle in 1 tsp of plain flour and use a whisk or spoon to mix it well. Let this cook for 5 to 10 minutes, simmering on low heat until it starts to thicken slightly. It should become creamy but not too heavy.

Make It Creamy

Now for the flavor magic! Stir in a heaped tablespoon of crème fraîche, followed by the grated parmesan, a bit more lemon zest, some chopped chives, and fresh parsley. Squeeze in a little more lemon juice but go easy here so the lemon doesn’t take over. Taste the sauce and add more salt and pepper if you think it needs it. This creamy bed is going to be the perfect partner for your crisp, flaky salmon.

Time to Serve

Once your salmon en croute is beautifully golden and cooked through, take it out of the oven and let it sit for a minute. You can trim the edges of the pastry if you like a neater look. Then spoon your creamy leek and spinach mixture onto a plate and gently place the salmon parcel right on top. It’s ready to enjoy flaky, juicy, and full of flavor in every bite.

Ingredients

  • 1 skinless salmon fillet

  • 1 sheet of ready-rolled puff pastry

  • 1 lemon (you’ll need the zest + juice)

  • 2 garlic cloves, puréed

  • 1 leek, finely sliced

  • Large handful of spinach

  • 150ml chicken stock

  • 1 tbsp half-fat crème fraîche

  • 1 tsp plain flour

  • 20g grated parmesan

  • Fresh chives and parsley

  • Salt and pepper

  • 1 egg (for brushing the pastry)

Directions

  • Prep the oven – Turn it on and set it to 180℃ (that’s about 350℉).
  • Get the salmon ready – Dry the salmon with a paper towel. Rub garlic purée over the top, then sprinkle on salt, pepper, lemon zest, and a little lemon juice.
  • Wrap it up – Unroll the pastry. Cut out a rectangle just a bit bigger than your salmon. That’s your bottom layer. Now cut another piece of the same size and slice it into long strips. Place the salmon on the bottom piece. Brush the edges with beaten egg, then lay the strips across the top like a crisscross pattern (this is called a lattice!). Brush it all with egg again.
  • Bake it – Put the wrapped salmon on a baking tray and bake for 20 minutes, or until the pastry is golden brown and puffy.
  • Make the creamy veggie bed – While the salmon bakes, cook the sliced leeks in a pan with a little salt (don’t let them brown). Add more garlic purée and stir. Toss in spinach and let it wilt. Pour in the chicken stock. Whisk in the flour and simmer gently for about 5–10 minutes until it gets a little thick.
  • Make it creamy – Mix in crème fraîche, parmesan, lemon zest, chopped chives, parsley, and a squeeze of lemon juice. Add salt and pepper if it needs more flavor.
  • Time to serve – Trim the pastry edges if needed and serve your crispy salmon on top of the creamy leek and spinach sauce.

Notes

  • Don’t skip drying the salmon it helps the seasonings stick and stops the pastry from getting soggy.
  • Make sure your pastry is cold, not warm. Warm pastry gets sticky and hard to work with.
  • Don’t overload the sauce with lemon. A little goes a long way!
  • If your sauce gets too thick, just splash in a bit more stock.
  • Make sure to seal the edges of your pastry well so nothing leaks out during baking.

Serving Suggestions

  • Pair it with mashed potatoes or roasted baby carrots.
  • A small green salad with vinaigrette makes a fresh side.
  • Want to go fancier? Add a swirl of extra lemon crème fraîche on the plate.
  • Perfect for a dinner-for-one treat, but it also impresses guests!
