Hey friends! If you’re looking for a quick and tasty dinner that’s also healthy, you’ve got to try this stuffed salmon with broccoli! It’s packed with flavor, takes less than 20 minutes to cook, and everything goes right into the air fryer. That means less mess and super easy clean-up. Plus, it’s high in protein and low in carbs perfect for a filling meal that won’t slow you down.

Let’s get cooking!

Method

Make the Yoghurt Stuffing:

First, grab a small mixing bowl and add all the ingredients for the yoghurt stuffing. This includes the finely chopped spinach, chopped sundried tomatoes, grated Parmesan cheese, thick yoghurt (I used 5% Fage for its creamy texture), chopped fresh dill, and a pinch of salt and pepper. Mix everything together until it’s well combined. The mixture should be thick enough to spread easily and stay on top of the salmon without sliding off. The sundried tomatoes add a pop of flavor, and the spinach gives the mix a nice green color and texture.

Prepare the Salmon:

Next, take your salmon fillet and place it skin-side down in the air fryer basket. For easier clean-up and to avoid sticking, I like to use a baking paper tray that fits inside the basket. Now, take the yoghurt mixture you just made and carefully spread it over the top of the salmon. Try to cover the fillet evenly, but don’t worry if some parts look a bit rustic it all tastes great once cooked. The topping acts like a flavor-packed blanket that keeps the salmon moist while it cooks.

Season the Broccoli:

Now it’s time to prep your broccoli. Take about 100 grams of tenderstem broccoli and place it in a bowl. Drizzle a little oil over it, then season with salt and pepper. If you like extra flavor, you can sprinkle a small amount of grated Parmesan cheese on top. This gives the broccoli a slightly crispy, cheesy finish when it cooks. Make sure to mix the broccoli well so the seasoning is spread evenly over each piece. If the broccoli stalks are thick, you can slice them in half so they cook more evenly in the air fryer.

Cook Everything Together:

Carefully place the seasoned broccoli in the air fryer basket, right next to the salmon. Try to give everything enough space so the hot air can circulate properly. Set your air fryer to 180°C (356°F) and cook for 10 to 13 minutes. Around the halfway point, open the air fryer and give the broccoli a quick stir or flip to make sure it cooks on all sides. Keep an eye on the salmon near the end once it flakes easily with a fork, it’s done! The top should look slightly golden and the yoghurt mix will be warm and flavorful.

Ingredients

  • For the salmon:

  • 110g salmon fillet (skinless)

  • For the yoghurt stuffing:

  • Small handful of spinach, finely chopped

  • 1–2 sundried tomatoes, chopped

  • 5–10g Parmesan cheese

  • 60g thick yoghurt (I used 5% Fage)

  • 1 tbsp fresh dill, chopped

  • Salt & pepper to taste

  • For the side:

  • 100g tenderstem broccoli

  • A drizzle of oil

  • Salt & pepper to taste

  • A little grated Parmesan cheese

Directions

  • Make the Yoghurt Stuffing: In a bowl, mix together the yoghurt, chopped spinach, sundried tomatoes, Parmesan cheese, dill, salt, and pepper. Give it a good stir.
  • Prepare the Salmon: Place the salmon fillet directly into the air fryer basket. I used a baking paper tray to keep things neat. Spread the yoghurt mixture evenly on top of the salmon.
  • Season the Broccoli: Coat the broccoli with a little oil, salt, and pepper. Sprinkle on some Parmesan if you like it cheesy.
  • Cook Everything Together: Place the broccoli beside the salmon in the air fryer. Cook at 180°C (356°F) for about 10–13 minutes. Flip or mix the broccoli halfway so it cooks evenly.

Notes

  • Don’t overcook the salmon check it around the 10-minute mark. It should be soft and flaky, not dry.
  • Use thick yoghurt, not runny. Thin yoghurt might slide off the salmon instead of staying in place.
  • Make sure your broccoli is cut into even pieces so it cooks at the same speed.

Serving Suggestions

Serve your stuffed salmon and broccoli with:

  • A wedge of lemon for a zesty kick
  • A side of mashed cauliflower or sweet potato if you want something extra
  • A slice of toasted sourdough for a little crunch (if you’re not low-carb!)

Fun Fact

Did you know? Salmon is full of omega-3 fatty acids these are super good fats that help your brain and heart stay strong. And broccoli? It’s packed with vitamin C, just like oranges!
