Hey friends!
Let me tell you about one of my favorite quick meals Vegan Stuffed Peppers! I used to make tacos with regular shells, but then I had this amazing idea: Why not use bell peppers instead? It’s healthy, colorful, and so tasty. Plus, everything is made in the air fryer which means less mess and super fast cooking.
This recipe is meat-free and uses soy mince instead of beef. It’s great for vegans, vegetarians, or anyone just looking for something yummy and healthy. Let’s get into it!
Method (Detailed)
Pre-cook the Peppers
First, start by preparing the bell peppers. Wash them well and slice each one in half, lengthwise. Carefully remove the seeds and any white bits inside. You want the halves to look like little boats these will be your colorful taco shells! Once cleaned, place the pepper halves in the air fryer basket, cut side up. Set the air fryer to 180°C (or 350°F) and let them cook for about 8 to 10 minutes. This softens the peppers just enough to make them tender, while still keeping their shape strong enough to hold the filling later.
Cook the Soy Mince
While the peppers are cooking, it’s time to prepare the flavorful vegan filling. Heat a non-stick pan over medium heat. Add a little oil if needed (especially if your mince is a bit dry), then toss in the chopped onion and minced garlic. Sauté for about 2 to 3 minutes, just until the onions start to look soft and golden. Now, add in your soy mince and the spice mix garlic powder, paprika, cumin, and oregano. Mix everything well so the spices coat the mince evenly. Let it cook for 5–6 minutes, stirring occasionally. Once it’s all hot and sizzling, add the pinto beans and give it one last good stir. The beans add extra protein, fiber, and texture to the mix.
Fill It Up!
Once the peppers are done cooking, carefully remove them from the air fryer using tongs or a spoon they’ll be hot! Place them on a plate or tray. Now it’s time to fill them. Spoon a generous amount of your cooked soy mince and bean mixture into each pepper half. Try to pack it in gently but fully, so every bite is full of flavor.
Garnish & Enjoy
Now for the fun toppings! Squeeze a little fresh lime juice over the stuffed peppers it gives a nice zesty pop. Then, add about a tablespoon of vegan cream cheese on top of each pepper. This gives a cool, creamy contrast to the warm, spiced filling. Sprinkle a bit of grated vegan cheese if you’re feeling cheesy (optional, but yum!). Lastly, add a few slices of avocado and a sprinkle of chopped fresh coriander. You’re done!
Just a heads-up: I tried eating these with a knife and fork before… but honestly, they’re much more fun (and way easier!) to eat with your hands. Don’t be afraid to get a little messy it’s part of the joy!

Directions
- Pre-cook the Peppers Slice the bell peppers in half, remove the seeds, and place them in your air fryer. Bake at 180°C (350°F) for 8–10 minutes until they start to soften.
- Cook the Soy Mince In a pan (or the air fryer if it has that function), cook the soy mince with chopped onions, garlic, and your spice mix. Add pinto beans at the end and stir everything together.
- Fill It Up! Take the peppers out and fill them with the mince-bean mix. Add a little lime juice for zing, a scoop of vegan cream cheese on top, and a sprinkle of grated cheese if you like.
- Garnish & Enjoy Finish with fresh coriander and sliced avocado. Eat with your hands it’s messy and fun! (I tried using a knife and fork once… didn’t go well.)
Notes
- Don’t overcook the peppers they should still hold their shape. If they get too soft, they’ll fall apart when you try to pick them up.
- Make sure to season the soy mince well it’s the flavor hero of this recipe!
- Add the cream cheese last so it stays creamy and cool.

Serving Suggestions
