Healthy Biscoff Flapjacks Recipe | Easy Banana & Oat Flapjacks

My Biscoff obsession is still going strong and this one is so good, it might just be my favorite bake yet. These healthy-ish Biscoff flapjacks were inspired by @sarahshealthykitchen, and trust me, they’re ridiculously easy and delicious. I made a small batch one afternoon with my sister Heidi and nephew Blake, and they didn’t last long.

What I love most? You get the sweet caramel Biscoff flavor but with a better-for-you twist thanks to ripe banana and honey for natural sweetness. Plus, it only takes a few steps and a bit of patience (mostly waiting for them to cool so you can drizzle all the good stuff on top!). Let’s get baking!

Method (In Detail)

Preheating the Oven

First things first get your oven ready! Preheat it to 160℃ (about 320℉) so it’s nice and warm by the time your flapjack mixture is prepped. This temperature allows the oats to slowly bake into a chewy, golden base without drying out or burning.

Mashing the Banana

Take one medium ripe banana (the riper, the better look for brown spots!) and pop it into a medium mixing bowl. Use a fork to mash it up really well. You want a smooth texture with as few lumps as possible. The banana not only adds sweetness but also helps bind the ingredients together, so make sure it’s mashed thoroughly.

Melting and Mixing the Wet Ingredients

Next, melt your Biscoff spread, butter, and set honey together. You can do this in a small saucepan over low heat or simply pop it in the microwave in a safe bowl for about 30–45 seconds. Once melted, pour the warm mixture into the mashed banana and stir well. This combo smells incredible and creates the sticky base that’ll hold your flapjacks together.

Adding the Oats

Now it’s time to stir in the rolled oats. Gradually add them to the wet mixture while mixing to make sure every oat gets coated. You’ll end up with a thick, sticky batter that holds its shape perfect for baking. If the mixture feels too dry (depending on your banana size), you can add a tiny bit more melted butter or a splash of milk.

Shaping and Smoothing

Line your 8 x 6.5 inch baking tray with parchment paper to prevent sticking. Then pour the oat mixture into the tray and spread it out evenly. Use the back of a spoon or spatula to smooth it down and press it gently into the corners. This step is important an even layer means even baking!

Baking Time

Place the tray into your preheated oven and bake for 30 minutes. The top should turn a light golden brown and feel slightly firm to the touch. Try not to overbake, or your flapjacks could end up dry instead of chewy and soft.

Cooling and Decorating

Once baked, remove the tray from the oven and let it cool completely in the tin. This is the hardest part because it smells so good but don’t skip this step! If you add the toppings while the flapjacks are still hot, the chocolate and Biscoff drizzle will melt and sink in instead of sitting beautifully on top.

When cooled, melt about 30g of chocolate and a spoonful of extra Biscoff spread. Drizzle them generously over the top in zig-zag patterns, swirls, or however you like. Once the toppings have set, slice into 6 even squares, and they’re ready to enjoy!

Ingredients

  • 1 medium ripe banana

  • 60g Lotus Biscoff spread, melted (I used the crunchy one!)

  • 40g salted butter

  • 25g set honey

  • 150g rolled oats

  • 30g melted chocolate (for topping)

  • Extra Lotus Biscoff for drizzling on top

Directions

  • Preheat your oven to 160℃ (that’s about 320℉).
  • In your mixing bowl, mash the banana with a fork until smooth.
  • Add the melted Biscoff, butter, and honey to the banana. Mix it all together until smooth.
  • Stir in the rolled oats. Make sure every oat is coated!
  • Pour the mixture into your lined baking tray. Level it out using the back of a spoon.
  • Pop it in the oven and bake for 30 minutes.
  • Let it cool completely before drizzling the melted chocolate and extra Biscoff on top.
  • Slice into squares, grab a fork (or your fingers!), and enjoy!

Notes

  • Don’t skip the cooling time before drizzling. If the flapjacks are too warm, your chocolate and Biscoff might melt into them instead of sitting pretty on top.
  • If your banana isn’t ripe, your flapjacks may not be sweet or soft enough. Go for one with brown spots!
  • Use rolled oats, not instant oats they give the best chewy texture.

Serving Suggestions

  • Serve with a cold glass of milk or a hot cup of tea.
  • Add a scoop of vanilla Greek yogurt on the side for extra creaminess.
  • Pack it in your lunchbox for a fun snack at school or work.
  • Crumble one square over ice cream for a Biscoff sundae twist!

Fun Fact

Did you know Biscoff cookies were first made in Belgium? The name comes from “biscuit” and “coffee” because they were originally meant to be served with coffee. No wonder they taste so good in everything!

Conclusion

These Biscoff flapjacks are my go-to when I want something sweet, gooey, and just a little bit better-for-you. They’re quick to make, easy to share (or not!), and absolutely perfect for cozy afternoons. Whether you’re baking with kids or just need a pick-me-up treat, this recipe is a winner every time.
