There’s something super cozy about baking on the weekend especially when it fills your home with the smell of fresh cardamom! These cardamom swirls are one of my favorite things to bake on a quiet Sunday morning. They look fancy, taste amazing, and believe it or not… they’re not that hard to make!
All you need is a little time and a lot of love (and cardamom of course). This small batch is perfect for two people over two mornings or for one person with a very big sweet tooth!
Method
Make the Dough
Start by combining all your dough ingredients in a large mixing bowl. That includes the warm milk (make sure it’s warm, not hot!), bread flour, sugar, egg, melted butter, and salt. Stir everything together until it begins to form a sticky dough. At this point, you can either knead the dough by hand for about 8–10 minutes or use a stand mixer with a dough hook if you have one. You’re looking for a smooth, elastic dough that comes together into a soft ball and pulls away from the sides of the bowl. If it’s too sticky, you can sprinkle in a little extra flour, but try not to overdo it it should stay soft and a bit tacky.
First Proof (Let It Rise!)
Once your dough is kneaded and ready, form it into a ball and place it back in the mixing bowl. Cover the bowl with cling film or a damp tea towel to keep the top of the dough from drying out. Then place the bowl in a warm, draft-free spot and let it sit for about 1½ hours, or until the dough has doubled in size. This process is called “proofing” (or proving!), and it’s super important for making your swirls fluffy and light.
Roll It Out
After the dough has risen nicely, gently punch it down to release some of the air bubbles. Then transfer it onto a clean, lightly floured surface. Use a rolling pin to roll it into a large rectangle, about ¼ inch (or ½ cm) thick. Try to keep the edges as neat and even as possible this helps when you roll the dough into swirls later.
Add the Filling
Next, it’s time to make those swirls delicious! Take your softened butter and spread it evenly across the surface of the rolled-out dough go all the way to the edges. In a small bowl, mix the sugar and ground cardamom together, then sprinkle this fragrant mix over the buttered dough. Don’t forget the corners! You want every bite to have that sweet, spiced flavor.
Roll and Cut into Swirls
Now comes the fun part rolling! Starting from one long side, carefully roll the dough into a log, keeping the roll as even as you can without stretching it too tight. Once it’s fully rolled up, use a piece of unflavored dental floss to slice the log into 6–8 equal pieces. Slide the floss under the log, cross the ends over the top, and pull tight to make a clean cut. This method works way better than a knife and gives you beautiful, round swirls.
Second Proof
Place your swirl buns onto a baking tray lined with parchment paper, leaving some space between each one so they have room to rise. Cover the tray again with a damp tea towel or cling film, and let them rest for another 30–45 minutes. This second proof gives the swirls one last boost before baking, helping them become super light and airy in the oven.
Bake
While your swirls are rising again, preheat your oven to 180°C (350°F). Once the buns have doubled in size and look puffed up, pop them into the oven and bake for 15 to 25 minutes. Keep an eye on them near the end they should turn a lovely golden brown on top. If your oven has hot spots, you can rotate the tray halfway through baking for even coloring. Let them cool just a little before serving… though they’re honestly the best when they’re still warm!

Directions
- Make the dough: Mix warm milk, flour, sugar, egg, melted butter, and salt in a large bowl. Use your hands or a mixer to form a soft dough ball.
- Proof the dough: Cover the bowl with cling film or a damp tea towel. Let the dough sit in a warm spot for about 1½ hours, or until it doubles in size. (Yes, it’s “proof” or “prove” both work!)
- Roll it out: Use a rolling pin to flatten the dough into a rectangle.
- Add the filling: Spread softened butter over the dough. Mix the sugar and cardamom together, then sprinkle it evenly.
- Roll & cut: Roll the dough like a log. Then, cut into swirls using floss (yes, dental floss! It really makes neat cuts!).

- Bake: Preheat the oven to 180°C (350°F) and bake the swirls for 15 to 25 minutes until they’re golden brown.
Notes
- Don’t skip the second proof it helps the swirls get super fluffy.
- Make sure your milk is warm, not hot too hot can kill the yeast.
- Don’t roll too tight or the filling might all squeeze out.
- If your dough feels too sticky, sprinkle a little more flour while rolling.
