I never thought a simple wrap with chickpeas could be so delicious but wow, this chickpea quesadilla recipe totally changed my mind! It’s crunchy on the outside, gooey and flavorful on the inside, and super satisfying. Whether you’re looking for a light lunch or a savory breakfast, this one’s a winner!
Method
Mash the Chickpeas:
Start by draining and rinsing half a can of chickpeas, then transfer them to a mixing bowl. Use a fork to mash them just enough so they break apart a little. You don’t need to mash them into a smooth paste having some chunks adds a nice texture inside the quesadilla. Set the mashed chickpeas aside while you prep the veggies.
Cook the Veggies:
Heat a drizzle of oil in a non-stick frying pan over medium heat. Once it’s warm, add your chopped onion and red pepper. Stir them around and let them cook for about 3 to 4 minutes, or until they start to soften and smell sweet. You’re not looking for browning just a nice gentle cook that brings out their flavor.
Add Spices:
Once the veggies are soft, sprinkle in the garlic powder, paprika, ground cumin, and salt. Stir everything well so that all the spices coat the onion and pepper evenly. This step is important because it toasts the spices and brings out their full flavor. Be careful not to burn them just stir for about 30 seconds to a minute until everything smells amazing.
Add the Chickpeas:
Now add the mashed chickpeas to the pan with the vegetables. Stir well so the chickpeas soak up the flavors of the veggies and spices. Cook the mixture for another 1 to 2 minutes, just to warm the chickpeas through. Once heated, remove the pan from the heat and set the filling aside.
Build Your Quesadilla:
Place your wholemeal wrap in the same pan you used before (no need to clean it!). Sprinkle grated cheese over one half of the wrap, then spoon the chickpea and veggie mixture evenly on top of the cheese. Fold the other half of the wrap over the filling to make a half-moon shape. Gently press it down with a spatula to help everything stick together.
Crisp It Up:
Let the quesadilla cook on medium heat until the bottom side is golden and crispy about 2–3 minutes. Then, carefully flip it over and cook the other side for another 2–3 minutes. The cheese should be melted, and the wrap should be nicely browned and crisp. Remove from the pan and let it rest for a minute before slicing it’ll be easier to cut and won’t fall apart.
Make the Salsa:
While the quesadilla cools slightly, add the avocado, light cream cheese, fresh coriander, lemon juice, honey, salt, and pepper into a blender. Blend until the salsa is smooth and creamy. Taste and adjust the seasoning if needed it should be tangy, slightly sweet, and full of flavor.
Time to Eat:
Slice your quesadilla into triangles and serve with a generous side of the creamy salsa dip. Dip each bite and enjoy the warm, cheesy filling paired with the cool and zesty sauce. It’s comfort food that feels fresh and fun!
