Hey friends! Today I’m sharing one of my favorite sweet bread recipes Cottage Cheese Bread made with just 6 wholesome ingredients! It’s soft, lightly sweet, and packed with protein. Plus, it’s gluten-free and super easy to make in one bowl. If you like simple, healthy recipes that taste amazing, this one is a must-try!
👩🍳 Method
Blend the Wet Ingredients
To start, grab your food processor or blender and add the cottage cheese and eggs. These two ingredients form the base of the bread and give it a creamy texture. Blend them together until the mixture is completely smooth. You want it to look silky with no lumps this helps create a soft, moist bread later on.
Add the Dry Ingredients
Next, it’s time to add the dry ingredients directly into the same processor. Toss in the oats, raisins, baking powder, and cinnamon. These ingredients bring in the sweetness, fiber, and warm flavor. The oats will help bind the bread, the raisins give a natural burst of sweetness, and the cinnamon adds that cozy, spiced touch.
Pulse, Don’t Blend!
⚠️ This is one of the most important parts of the recipe. Once all the dry ingredients are added, do not fully blend. Instead, use the pulse setting on your processor just a few times. The goal here is to roughly mix everything while still keeping some texture, especially from the raisins and oats. Over-blending will make the batter too mushy and take away the nice chewiness that makes this bread so special.
Prepare the Loaf Pan
Now, take a loaf pan (20cm x 10cm is ideal) and line it with baking paper. This makes sure the bread doesn’t stick and also makes it easier to lift out once baked. Pour your pulsed mixture into the lined pan, spreading it out evenly with a spatula or spoon.
Top and Bake
Before baking, sprinkle a few extra oats on top of the batter. This adds a lovely rustic look and helps prevent the top from overcooking or getting too dark in the oven. Then, place the pan into a preheated oven at 180°C (350°F) and bake for 40 minutes. By the end, your kitchen will smell amazing!
Cool Before Slicing
Once the bread is baked and looks golden on top, take it out and let it rest in the pan for 5 minutes. This helps it settle and makes it easier to handle. Then, gently lift it out using the baking paper and place it on a cooling rack. Now comes the hard part don’t cut it yet! Let it cool completely before slicing, or the inside might fall apart. The wait is totally worth it for neat, perfect slices.

⚠️ This is important! Just pulse the mix a few times. We want everything mixed and the raisins a little chopped but not completely mushy. - Get the loaf pan ready.
Line your loaf pan with baking paper. Pour the batter into the pan. Sprinkle extra oats on top it looks pretty and helps keep the top from overcooking. - Bake.
Pop it into the oven at 180°C (350°F) for 40 minutes. - Cool it down.
Let the bread sit in the pan for 5 minutes, then carefully move it to a cooling rack. Don’t slice it right away let it cool completely first.
Notes
- Don’t over-blend the mix after adding raisins. You want texture, not mush.
