Have you ever added grapes to your salad? I hadn’t tried it until recently, and oh wow I was seriously missing out! The sweet pop of grapes mixed with crunchy veggies, quinoa, and a creamy nutty dressing is just so good. If you’re ready to try something fun, fresh, and a little different, this grape salad is a must-make!

Method

Cook the Quinoa

Start by preparing the quinoa if it’s not already cooked. Quinoa is super simple to make just rinse it under cold water to remove any bitterness, then add it to a saucepan with twice the amount of water (for 100g quinoa, use about 200ml water). Bring it to a boil, then lower the heat and let it simmer until the water is absorbed and the quinoa is soft and fluffy about 10–12 minutes. Once it’s cooked, fluff it with a fork and set it aside to cool. Letting it cool is important because warm quinoa can wilt your fresh spinach when mixed together.

Chop It Up

Next, it’s time to prep your fresh ingredients. Start by peeling and finely slicing the red onion. Then, cut the cauliflower into small bite-sized florets you want them small enough so you get a bit in each bite without overwhelming the other flavors. Take your red grapes and slice them in half. This little trick spreads their sweetness throughout the salad and keeps the texture just right. If you haven’t already, roughly chop the almonds into smaller pieces for a nice crunch in every bite.

Mix the Salad

Grab your biggest salad bowl it’s mixing time! Toss in the spinach leaves (about three-quarters of a standard bag), the cooled quinoa, the chopped cauliflower, red onion, halved grapes, dried cranberries, and chopped almonds. Gently mix all these ingredients together until they’re well combined. You’ll already start to see all the beautiful colors and textures coming together. It should look fresh, vibrant, and super inviting!

Blend the Dressing

Now onto the creamy, dreamy dressing! In a blender or food processor, combine your hatful of cashews (which is around ½ cup), 2 tablespoons of water, 1 tablespoon lemon juice, 1 garlic clove, 2 tablespoons of oat milk, and a pinch of salt and pepper. Blend everything together until the mixture is silky smooth. If your blender is having a hard time breaking down the cashews, soak them in warm water for 10–15 minutes beforehand it’ll make blending much easier and give you a super creamy texture. Taste the dressing and feel free to tweak the flavor add more lemon for tang, garlic for spice, or a little more oat milk if it’s too thick.

Put It All Together

Now for the grand finale! Pour your freshly blended dressing over the salad mixture. Using a large spoon or spatula, gently toss everything until the dressing coats all the ingredients evenly. Make sure every leaf, grape, and floret gets a touch of that creamy cashew dressing. Once it’s all combined, your grape salad is ready to serve!
