Hey there, cookie lovers!
Today I’m sharing one of my favorite super easy and super yummy recipes Healthy Oat Banana Cookies! These cookies are soft, chewy, and made with just 5 simple ingredients. No white sugar, no butter, and no flour! Just wholesome goodness that’s sweet enough to feel like a treat but healthy enough to eat for breakfast. Let’s get baking!
Method
Mash the Banana
Start by grabbing your mixing bowl and peeling your ripe banana. The riper, the better it should have some brown spots and feel soft when squeezed. Use a fork to mash the banana until it becomes a smooth purée. This will be the base of your cookies and give them natural sweetness and moisture, so make sure to mash out any big lumps.
Add the Almond Butter and Cinnamon
Next, add 60 grams of almond butter and 1 teaspoon of cinnamon directly into the mashed banana. Stir everything together using a spoon or spatula. The mixture should become thick, creamy, and evenly blended. The almond butter brings healthy fats and a rich flavor, while the cinnamon adds warmth and a cozy aroma.
Mix in the Oats and Raisins
Now it’s time to add the dry ingredients. Pour 80 grams of oats into the wet mixture, followed by 60 grams of raisins. Stir well until all the oats and raisins are evenly coated. The batter will be thick and slightly sticky. If it seems too dry (depending on your banana size), you can add a tiny splash of plant-based milk to help everything combine.
Shape the Cookies
Once your dough is ready, scoop it using a spoon and place 5 equal mounds onto a baking tray. For best results, line the tray with parchment paper or lightly grease it to prevent sticking. Use the back of your spoon to gently press the mounds into round cookie shapes. These cookies won’t spread much in the oven, so shape them how you want them to look.
Bake
Preheat your oven to 180°C (350°F). Once hot, place the tray in the oven and bake the cookies for 11 to 12 minutes, or until the edges are golden brown. Keep an eye on them in the last minute to avoid overbaking they should still be soft when you remove them.
Cool and Enjoy
After baking, remove the tray from the oven and let the cookies cool for a few minutes. They’ll firm up slightly as they cool. Be patient picking them up too soon might cause them to break apart. Once they’re set, serve them warm or store them in an airtight container for later snacking!
