If you’re like me, you might think of spring rolls as something greasy from a takeout menu. But wait till you try these! My Healthy Spring Rolls are full of flavor, loaded with veggies, and the best part no frying at all! You get all the taste of your favorite spring rolls, but made in a much lighter and healthier way. These are perfect as a starter, snack, or even a full meal if you make enough (which I always do). Let’s roll!
Method
Prep the Veggies and Tofu
First, get all your veggies ready so cooking goes smoothly. Start by grating the carrots using a hand grater. Then, chop the cabbage into very thin strips almost like shreds. Slice the mushrooms into small pieces and finely chop the spring onions. The tofu should be crumbled using either your hands or a fork, so it blends well into the filling and soaks up the flavor as it cooks. Set everything aside in separate little bowls if it helps you stay organized.
Cook the Filling
Heat a large non-stick pan or wok over medium heat. Drizzle in just a small amount of sesame oil this adds a wonderful nutty flavor without making the dish greasy. Add the garlic and ginger first and stir them around for about 30 seconds until they’re fragrant. Then, toss in the mushrooms and tofu. Let them cook for 2–3 minutes so they start to brown slightly and absorb the aromatics. Next, add your grated carrots, shredded cabbage, and chopped spring onions. Stir-fry everything together for another 4–5 minutes until the vegetables begin to soften but still have a slight crunch. Finish off by splashing in some soy sauce to taste it brings everything together with that classic umami kick. Once done, remove the pan from the heat and let the mixture cool completely before wrapping. This is super important to prevent the wrappers from tearing.
Make the Flour Paste
While your filling is cooling, prepare the “glue” to seal your rolls. In a small bowl, mix 1 tablespoon of all-purpose flour with 2 tablespoons of water. Stir until it forms a smooth, creamy paste this will act like an edible glue to help keep the wrappers sealed when rolling.
Wrap the Rolls
Lay one spring roll wrapper flat on a clean, dry surface. If the wrappers are sticking together or drying out, cover them with a damp towel while you work. Take a spoonful of the cooled filling and place it near one corner of the wrapper. Begin by folding that corner over the filling. Then fold in both sides (like you would with a burrito), and roll it up tightly from the bottom. Before sealing the final edge, dip your finger into the flour paste and brush a little along the inside edge to seal it closed. Gently press to make sure it’s sealed well. Repeat the process until you’ve used up all your filling.
Serve and Enjoy
Once all your spring rolls are wrapped and sealed, they’re ready to eat! There’s no need to fry or bake these are delicious served fresh and slightly chilled. Their light, crunchy bite and bold, savory filling make them an instant favorite. Serve with your favorite dipping sauce (mine is a spicy chili sauce!), and enjoy the guilt-free goodness!

Notes
- Let the filling cool down before wrapping hot filling can tear the wrappers.
- Don’t overstuff the rolls it makes wrapping tricky and messy.
- Keep wrappers covered with a damp towel so they don’t dry out while you’re working.
- Use just a little flour paste too much can make it gooey or hard to seal.
