If you’re like me, there are days when you want something fast, tasty, and good for you without making a huge mess in the kitchen. That’s when I turn to this Lemon and Tuna Pasta! It’s light, fresh, and packed with 46g of protein per serving, which makes it great for busy weekdays or post-sports dinners.
The best part? You probably already have most of the ingredients sitting in your cupboard. This pasta recipe takes only 15 minutes and feels like something you’d get in a cozy Italian café even though it’s made with canned tuna!
Method
Boil the Pasta
To begin, bring a medium pot of water to a boil. Once it’s bubbling, add a small handful of salt this helps give your pasta some flavor while it cooks. Next, drop in 90 grams of your favorite pasta. Stir it so it doesn’t stick together, and let it cook based on the time written on the package, usually about 8–10 minutes. While the pasta is boiling, you can prepare the tuna sauce to save time.
Make the Garlic Oil
While the pasta cooks, grab a large pan or skillet and pour in one tablespoon of olive oil. Place the pan over medium heat. Now, add two garlic cloves either chopped finely or gently smashed. Stir them around in the oil for a couple of minutes. It’s really important not to let the garlic turn brown or burn. You want it to be golden and fragrant, not dark and bitter.
Add the Tuna
Open your can of tuna and drain out the extra water or oil. Add the tuna to the pan with the garlic oil. Use a spoon or fork to break the tuna into smaller pieces so it spreads evenly through the dish. Let the tuna heat up with the garlic oil for a minute or two. This helps bring out the flavor and warms it through without overcooking it.
Mix it Up
Once your pasta is cooked, carefully drain it using a pasta strainer. Then, quickly add the cooked pasta into the pan with the tuna and garlic oil. If you like, you can save a little of the pasta water before draining it can come in handy later. Stir the pasta and tuna together so everything is mixed nicely and nothing is sticking to the bottom of the pan.
Add Flavor
Now it’s time to bring your dish to life. Add two tablespoons of capers and the zest of half a lemon right into the pan. The lemon zest gives your pasta a bright, citrusy taste, and the capers add a bit of tangy flavor. Sprinkle in some chopped parsley and then season with salt and pepper to taste. Make sure to mix everything well so the flavors are spread all throughout the pasta.
Fix the Texture
Sometimes pasta can dry out quickly, especially if it’s been sitting or if your tuna came packed in water. If your dish looks a little dry, don’t worry! Just add a small splash of the pasta water you saved earlier, or drizzle in a little extra olive oil. Stir everything again until the texture is just right creamy and glossy but not too wet.
