There’s something special about a cozy roast chicken meal and guess what? You only need one pan to make it! This one pan roast chicken is one of my favorite go-to recipes. It’s simple, flavorful, and full of veggies that roast right alongside the chicken. No need to be a kitchen expert this recipe is super beginner-friendly and perfect for anyone who wants a hearty homemade meal without the mess.

Method (Step-by-Step in Detail)

Chop the Vegetables

Start by preparing all your vegetables. Peel and chop the parsnip, carrots, potatoes, and red onion into small cubes or thin sticks. Cut the Brussels sprouts in half. The trick here is to chop everything small and evenly, so the vegetables cook at the same speed as the chicken. This step helps every bite turn out soft on the inside and a little crispy on the edges.

Layer the Pan

Next, take a large baking tin or oven-safe pan and place the chicken thighs (with the skin on) right in the center. Then, spread the chopped vegetables around the chicken. If you’re using stuffing, add it to one corner of the pan or nestle it in between the veggies. Everything should be spread out nicely so it all roasts evenly.

Add Spices and Oil

Now it’s time to add the flavor! Sprinkle 1 tablespoon of Italian seasoning, 2 teaspoons of garlic powder, and 1 crumbled stock cube all over the chicken and vegetables. Then drizzle 1 tablespoon of extra virgin olive oil across the whole tray. These spices will give the meal a cozy, savory taste that fills your kitchen with an amazing smell as it cooks.

Mix Well

Use a spoon or your hands (wear gloves if you like) to mix everything gently right in the baking tin. Make sure all the veggies and the chicken get coated in the oil and spices. This helps lock in the flavor and makes every bite delicious. Don’t skip this step it makes a big difference!

Bake the Chicken and Veggies

Preheat your oven to 180°C (350°F) and place the pan in the center rack. Let everything roast for about 40 minutes. During this time, the chicken will cook through and get a golden skin, while the vegetables will soften and start to caramelize.

Add Yorkshire Puddings

After 40 minutes, carefully remove the baking tin from the oven using oven mitts. Now, add the mini Yorkshire puddings right on top of the tray. These only need a short time to cook, so once they’re in, place the tray back in the oven and bake for an extra 5 minutes.

Let It Rest

When everything is done, take the tray out and let it rest for a few minutes. This step helps the chicken juices settle and keeps the meat tender and moist. Don’t rush this part good things come to those who wait!

Pour the Juices and Serve

Once rested, take a spoon and scoop some of the juicy liquid from the bottom of the pan and drizzle it over the chicken. This adds so much flavor and gives the meat that shiny, mouthwatering finish. Finally, serve everything straight from the pan with warm gravy on the side or poured over the top if you’re like me!
