Hi friends! I’m excited to share one of my favorite holiday recipes Spiced “Christmas Pudding Köfte”. These juicy lamb meatballs are full of flavor and perfect for festive dinners. They look like little Christmas puddings and taste amazing. My family always asks for these during the holidays, and they disappear fast!
You can bake them or fry them, and they go perfectly with a creamy lemon and honey yogurt. Let’s get cooking!
Method
Mix the Meatballs
To start, grab a large mixing bowl and add all of your köfte ingredients: lamb mince, grated and squeezed onion, grated garlic, chopped parsley, dried mint, pomegranate molasses, red pepper paste, paprika, pul biber, black pepper, and sea salt. It’s important to squeeze out the juice from the grated onion so the mixture doesn’t get too wet. Use your hands or a spoon to mix everything together really well until all the spices and herbs are evenly spread through the meat. Once the mixture is ready, place the bowl in the fridge and let it chill for about 30 minutes. This helps the mixture firm up, making it easier to shape into meatballs later.
Make the Yogurt Sauce
While the meat is chilling, you can prepare the lemon and honey yogurt. In a small bowl, combine the thick natural yogurt with honey, lemon juice, lemon zest, fresh chopped dill, and a small pinch of sea salt flakes. Stir it all together until smooth and creamy. Place this bowl in the fridge too, so the flavors can blend and stay cool until serving time.
Shape the Köfte
Once the meat mixture has had time to chill, take it out of the fridge. Fill a small bowl with cold water and dip your hands into it. This helps prevent the mixture from sticking to your fingers. Now, take small amounts of the meat and roll them between your hands to form round balls about the size of a ping-pong ball. You should end up with around 18 to 20 köfte balls.
Cook the Köfte Oven Method
If you want to bake the köfte, preheat your oven to 190°C with the fan on, or 210°C in a regular oven. Line a baking tray with parchment paper so nothing sticks. Place the meatballs on the tray, leaving a little space between each one. Brush the tops of the köfte with a bit of olive oil to help them brown nicely. Bake them in the middle of the oven for 15 to 20 minutes. Around halfway through, use tongs or a spatula to gently turn each one so they cook evenly and get that golden color on both sides.
Cook the Köfte Frying Method
If you prefer to fry the köfte, pour enough olive oil into a frying pan so it reaches about 1 cm up the sides. Heat the oil gently over medium heat. Once it’s hot, add a few köfte at a time. Don’t crowd the pan leave room for them to cook evenly. Turn the köfte often and carefully so they brown on all sides. As they cook, you can also spoon some of the hot oil over the tops to help them cook through and stay juicy. When they are cooked through and golden all over, remove them from the pan and place them on a paper towel or plate to rest for a moment.
Serve the Köfte
Now it’s time to build your delicious plate! Lightly toast some lavash or pita bread. Place each köfte on a small piece of the bread. Brush them with a little juice from the tray or pan to keep them moist. Add a small dollop of the lemon and honey yogurt on top of each one. Then sprinkle on your toppings sumac, pul biber, black pepper, lemon zest, pomegranate seeds, and a few sprigs of fresh dill. It’s like decorating little festive treats, and they taste just as good as they look!
