Hey friends!
Today I’m sharing one of my favorite cozy recipes Easy Butternut Squash Soup Recipe! This warm, silky soup is full of flavor and perfect for chilly days. It only takes 7 simple ingredients, one pan, and a little love to make. Plus, it has a fun little kick from fresh ginger and turmeric. This is the soup you make when you want comfort in a bowl!
Let’s get started!
Method (In Detail)
Start Cooking
To begin, grab a large pan or soup pot and place it over medium heat. Add the chopped butternut squash, diced yellow onion, whole garlic cloves (you can smash them a little if you like), grated fresh ginger, and the turmeric powder. Let these ingredients cook together for about 4–5 minutes. Stir them gently as they begin to soften and sizzle. This step helps the vegetables release their natural flavors and lets the turmeric and ginger bloom, making the soup extra fragrant and flavorful.
Add the Stock
After the veggies have softened slightly, it’s time to pour in your vegetable stock. You can use anywhere between 200 to 300 ml depending on how thick or thin you prefer your soup. Stir well to combine everything. Turn the heat to low, cover the pot with a lid, and let it simmer for around 15 minutes. You’ll know it’s ready when the butternut squash is fork-tender meaning it’s soft and breaks apart easily with a fork.
Add the Creaminess
Once the squash is nice and soft, reduce the heat to low and add half a can of creamy coconut milk to the pot. Stir slowly to blend the coconut milk into the soup. It’s very important at this stage not to let the soup boil after adding the coconut milk. Coconut milk can split or curdle if it boils, which will change the texture of your soup. So just keep the heat low and let it get warm without bubbling.
Blend It Up
Now comes the fun part blending the soup! If you have a hand blender (also known as an immersion blender), you can use it directly in the pan. Just be careful as the soup is hot. Blend until the mixture is smooth and silky, with no chunks left. If you’re using a regular countertop blender, let the soup cool down for a few minutes first to avoid any accidents, then transfer it carefully in batches, blend, and pour it back into the pot to rewarm.
Add Toppings
You can enjoy the soup as it is, but I highly recommend adding a crunchy topping like roasted chickpeas! To make them, simply toss cooked or canned chickpeas with a little oil, cumin seeds, and salt. Spread them on a baking tray and roast in the oven at 180°C (350°F) for about 30 minutes or until they are golden and crispy. These chickpeas not only add a lovely crunch but also boost the protein and texture of your bowl.

1 yellow onion, chopped
1 tablespoon grated fresh ginger
3–5 garlic cloves, peeled
1 teaspoon turmeric powder
1/2 can coconut milk
200–300 ml vegetable stock (depending on how thick you like your soup)
Optional topping:
Crunchy chickpeas (baked with oil, cumin seeds, and salt)
Directions
- Start cooking: In a large pan, add the chopped butternut squash, onion, garlic, grated ginger, and turmeric. Cook over medium heat for a few minutes to let the flavors wake up!
- Add the stock: Pour in the vegetable stock. Cover and let it simmer until the squash is soft and easy to poke with a fork.
- Add the creaminess: Once the veggies are soft, stir in the coconut milk. Don’t let it boil just heat it gently.
- Blend it up: Use a hand blender right in the pan (careful it’s hot!) and blend until smooth. If you’re using a regular blender, let the soup cool a little first, then blend and return it to the pot to warm.
- Add toppings: I love topping mine with crunchy roasted chickpeas! Just mix them with a little oil, cumin seeds, and salt, then bake at 180°C (350°F) for about 30 minutes until crispy.
Notes
- Don’t boil the soup after adding the coconut milk it can separate and look curdled. Just heat it gently.
- If using a blender, let the soup cool slightly before blending so you don’t burn yourself or pop the lid!
- Chop the butternut squash into small, even cubes so it cooks evenly and blends easily.
- Taste before serving you may want a pinch of salt depending on your stock.
