Who doesn’t love a good steak and chips, right? Recently, we’ve been making our own homemade version on Sundays, and let me tell you, it’s SO much better than what you get in most restaurants! Not only is it cheaper, but it’s also super easy to make. In fact, the whole thing takes just 20 minutes mostly just the time for the chips to cook!

For this meal, we used a “Taste the Difference” steak from @sainsburys, which turned out to be incredibly tender and flavorful (and trust me, I’m pretty picky about my steak). To make the meal even better, I whipped up a peppercorn sauce using the leftover pan juices and paired it with crispy chips, a rich blue cheese sauce, and buttery garlic mushrooms. Honestly, this homemade version is so good, I’ll be raising the bar for my next restaurant steak visit!

Method

Prep the Potatoes for Chips:

Start by peeling the two large potatoes and slicing them into thin wedges, aiming for uniform pieces so they cook evenly. After slicing, place the potatoes in a pot and cover them with water. Bring the water to a boil and let the potatoes cook for about 5-7 minutes until they are slightly soft but not fully cooked. The goal here is to give them a head start before frying, which ensures they’ll be perfectly crispy on the outside while tender on the inside. Once boiled, drain the water and set the potatoes aside, ready for frying.

Cook the Steaks:

While the potatoes are boiling, it’s time to cook the steaks. Heat your frying pan or skillet over medium-high heat for about 2 minutes. Once the pan is hot, season your steaks with salt and pepper on both sides to enhance the natural flavors of the meat. Add a bit of oil or butter to the pan, and carefully place the steaks in the pan. Cook the steaks for about 4 minutes per side for a medium-rare to medium doneness. If you prefer your steak well-done, you can cook it a little longer, but keep in mind that this may affect the tenderness of the meat. Once the steaks are cooked to your liking, remove them from the pan and place them on a plate. Allow them to rest for 5 minutes to lock in the juices, making the steak more tender and flavorful.

Make the Peppercorn Sauce:

In the same pan where the steaks were cooked, add a half cup of heavy cream and one tablespoon of cracked black pepper. The flavor from the steak will infuse into the sauce, giving it an incredibly rich and savory taste. Stir gently to combine the ingredients, scraping up any delicious brown bits left in the pan from the steak. Let the sauce simmer on low heat for 2-3 minutes, stirring occasionally until it thickens slightly. The result is a creamy and flavorful peppercorn sauce that complements the steak perfectly.

Cook the Chips:

Now it’s time to fry the potatoes. In a separate pan, heat a generous amount of olive oil over medium-high heat. Once the oil is hot, carefully add the boiled potato wedges to the pan, making sure not to overcrowd them. Fry the potatoes for about 8-10 minutes, turning occasionally to ensure they are golden brown and crispy on all sides. You’ll know they’re done when they have a crunchy exterior and a soft, fluffy interior. Once cooked, use a slotted spoon to remove the chips from the oil and place them on a plate lined with paper towels to drain any excess oil. Sprinkle with a little salt while they’re still hot to enhance the flavor.

Prepare the Blue Cheese Sauce:

While the chips are cooking, it’s time to prepare the blue cheese sauce. In a small pot, combine a quarter cup of blue cheese with half a cup of heavy cream. Place the pot over low to medium heat and stir until the cheese is fully melted and the sauce becomes smooth. If you prefer a thinner sauce, you can add a little more cream to adjust the consistency. The creamy blue cheese sauce adds a rich and tangy flavor that pairs wonderfully with the crispy chips.

Cook the Mushrooms:

Finally, cook the mushrooms to add an extra layer of flavor to the meal. In the same pan you used for the steaks (which should still have a bit of residual flavor), melt one tablespoon of butter over medium heat. Add the minced garlic to the pan and sauté it for about 1 minute until it becomes fragrant. Then, add the sliced mushrooms and cook for about 4 minutes, stirring occasionally, until they become tender and golden brown. The butter and garlic will infuse the mushrooms with a savory, rich flavor, making them the perfect accompaniment to the steak and chips.

Ingredients

  • 2 steaks (any cut you prefer, I went with a tender “Taste the Difference” from @sainsburys)

  • 2 large potatoes (for homemade chips)

  • 1 tablespoon of butter

  • 1 clove of garlic, minced

  • 1 tablespoon of olive oil (for frying chips)

  • 1/2 cup of heavy cream (for the sauce)

  • 1 tablespoon of cracked black pepper (for the sauce)

  • 1/4 cup of blue cheese (for the sauce)

  • Salt and pepper to taste

Directions

  • Prep the Potatoes for Chips: Start by peeling and slicing your potatoes into thin wedges. Then, boil them in water for about 5-7 minutes until they’re just a bit soft. Drain the water and set them aside.
  • Cook the Steaks: Heat your frying pan over medium-high heat. Season your steaks with salt and pepper, then cook them to your liking (about 4 minutes per side for medium). Once cooked, take them off the heat and let them rest for a few minutes to lock in the juices.
  • Make the Peppercorn Sauce: In the same pan where you cooked the steak, add a little cream and cracked black pepper. Stir it gently to mix, allowing the flavor from the steak to infuse into the sauce. Let it simmer on low for 2-3 minutes until it thickens slightly.
  • Cook the Chips: Heat a generous amount of oil in another pan. Fry your boiled potatoes until golden brown and crispy on all sides. This should take about 8-10 minutes. Once done, sprinkle with a little salt.
  • Prepare the Blue Cheese Sauce: In a separate small pot, add your cream and blue cheese. Stir until the cheese melts and the sauce becomes smooth. You can add more cream if you want a thinner consistency.
  • Cook the Mushrooms: In the same pan where you cooked the steaks, melt butter and sauté the garlic for about 1 minute. Then, add your mushrooms and cook until they’re tender and golden brown, about 4 minutes.

Notes

  • Don’t overcrowd the pan when cooking the chips make sure they have plenty of space to cook evenly and become crispy.
  • Let the steak rest after cooking this helps the juices settle back into the meat, making it tender and juicy!
  • Be careful with the blue cheese sauce since blue cheese has a strong flavor, you may want to adjust the amount of cheese to your taste.

Serving Suggestions

This meal is perfect for a Sunday lunch or a casual dinner with friends. Serve the steak and chips with a side of garlic butter mushrooms and drizzle the blue cheese sauce over the chips. You can also add a simple salad for some extra crunch and freshness.
