Okay, friends this one’s for you if you don’t like tofu… or at least think you don’t. I’ve got a secret: these tofu kebabs are amazing. I’m serious! This might just be the best tofu recipe we’ve made so far. It’s juicy, creamy, crunchy, and packed with flavor. Each part of the recipe is made to go perfectly with the others. So please don’t skip anything! Trust me it’s totally worth it.
Let’s jump into the magic!
Method
Prepping the Tofu
Start by choosing firm tofu for the best texture. Take about 200g of tofu and gently pat it dry using a clean kitchen towel or paper towel to remove any excess water. This helps it cook better and absorb more flavor. Once dry, slice the tofu into long rectangular sticks think finger-sized, but not too thick. You want them to hold up in the pan without breaking apart but still be easy to bite into when served in the flatbread.
Making the Ketchup Sauce
In a small mixing bowl, combine 3 tablespoons of tomato puree, 1.5 tablespoons of maple syrup, 2 tablespoons of apple cider vinegar, 2 tablespoons of soy sauce, 1/2 teaspoon of garlic powder, and 1/3 teaspoon of salt. Stir everything together until smooth and fully blended. This sweet, tangy, and savory sauce will be used to glaze the tofu during cooking. It’s important that the flavors are balanced, so give it a taste and adjust if needed!
Preparing the Tahini Cream
Next, grab another bowl and whisk together 200g of natural soy yoghurt, 100g of light tahini, 1/2 teaspoon of garlic powder, the juice of half a lemon, and a small pinch of salt. Mix until the texture is smooth, creamy, and spoonable. This tahini cream adds richness and a tangy depth that complements the tofu beautifully. If the cream feels too thick, add a tiny splash of water. If it’s too thin, a spoonful more of tahini will fix it right up.
Quick Pickled Red Onions
Now it’s time to make those magical pickled onions. Thinly slice half a red onion and place the slices in a small bowl. Pour in about 75 ml of apple cider vinegar and add a pinch of salt. Stir and let them sit while you work on the rest of the recipe. This quick pickling process takes just 15–20 minutes and gives the onions a bright, zesty flavor that really wakes up the dish.
Making the Fresh Salad
To add crunch and freshness, prepare a simple salad. Dice half a cucumber and cut about 150g of cherry tomatoes into halves or quarters, depending on size. Chop a handful of fresh coriander and toss everything into a bowl. Season the salad with a bit of salt and pepper and finish it off with a light drizzle of olive oil. Mix gently to coat all the veggies without making them soggy.
Cooking the Tofu
Heat a non-stick frying pan or skillet over medium heat. Once hot, add your tofu pieces in a single layer don’t overcrowd the pan. Let them cook undisturbed for a minute or two until the bottoms start turning golden. Then flip the pieces and pour in the ketchup sauce you prepared earlier. Stir the tofu gently so all sides get coated in the sticky, flavorful sauce. Let it simmer for a few minutes, allowing the sauce to reduce and glaze the tofu nicely. You’ll know it’s ready when it looks glossy and slightly caramelized.
Assembling the Tofu Kebabs
Now comes the fun part putting it all together! Lay your flatbreads on a serving plate. Start by spreading a generous layer of the tahini cream all over each flatbread. This will be the creamy base that holds everything in place. Next, spoon some of the fresh cucumber-tomato salad over the cream. Then carefully add the glazed tofu strips on top, laying them in the center. Finish with a few pickled red onions for that extra zing. You can roll it up like a wrap, fold it in half like a taco, or enjoy it open-faced like a loaded flatbread.
